I found that adding roasted veggies to slow cooked soups deepens the flavor.. It is a way to counter the 'blandness' of so many slow-cooked dishes, in addition to sautéing ingredients and adding your favorite herbs and spices. Here are my modifications--used trader joe's roasted tomatoes with roasted green chiles (for the mashed whole peeled tomatoes and can of chilies), 5-6 cloves roasted garlic, and roasted corn (frozen). I used 3/4 lb of chicken which was plenty. Quite a delicious, thick hearty soup. Freezes well. Will make it again.
