Classic Bran Muffins

Wonderful recipe!!! As many others have suggested, I substituted applesauce for oil, used wheat flour instead of white, used 2 egg whites instead of one whole egg, omitted the salt (watching our sodium) and used 1 cup of raisins instead of 1/2 cup. I also used the mini muffin tins and it yielded about 40 mini muffins. They are so delicious that even my children will eat them. :) In case you are in Weight Watchers, I've calculated the points with my new substitutions and one large muffin would be 4 points on the Points Plus and one small muffin would be 1 point on the Points Plus. I did use double the raisins though, so it would probably been even lower if you use just what the recipe called for. Thanks for this wonderful recipe Janet. We love it at our house! :)

Rhubarb Salsa

This was wonderful! I've made it a couple of times now. We've used it for to top chips, put on grilled chicken and used it in halibut tacos. I once made it with lemon juice because I didn't have enough lime and it turned out just as wonderful. I also add cilantro. I would make it a day ahead and let it sit in the fridge so all the flavors can meld together. You should definitely try this!! I had friends come over that immediately asked for the recipe. Thanks!

Lemon Garlic Tilapia

Wonderful!!! I used olive oil instead of butter and I didn't miss a thing. We used this on our ling cod and it was great. I will definitely be making this again. It's super easy and the ingredients are most always in our house. Thanks!

Turkey Lasagna with Butternut Squash, Zucchini, and Spinach

Wonderful! This was a great recipe. We made it minus the squash as I didn't have any on hand and it was superb. My husband said he would give it 10 stars if he could. I just made another batch of it tonight but substituted the turkey for ground duck. I'm hoping for even better results. Thanks!

Tomato Curry Chicken

WOW! This was awesome! My husband made this and to be honest, I was thinking I'd have to eat something else for dinner as I don't like curry. But, it was amazing. I even had seconds! We did make a few (slight) changes to make it even healthier. We used olive oil instead of butter, omitted the parm (we didn't miss it at all!) and added small red potatoes to the dish. Super yummy! We will definitely be making this again soon. Thanks!

Grilled Wild Duck Breast

Awesome recipe! Like other readers, we put the duck in a bath of ice water & salt and that definitely made the duck not gamey at all. This recipe was so great we made it two nights in a row. Thanks for sharing. :)

Italian Cookies I

Awesome cookie! I was initially surprised that they were not that sweet. They kind of tasted like a sweet biscuit. I then added the glaze from the Italian Cookies II recipe on this website. These were devoured and everyone raved!!! Thanks!

Crustless Spinach Quiche

This was wonderful! :) I used 2 c low fat cheddar cheese and 1 c colby jack/mozz mixture. I also threw in a red pepper for a bit more color. It was DELISH. Thanks for the recipe. I love the fact that it's pretty low fat.

Cantaloupe Bread with Praline Glaze

Awesome bread! Who knew that cantaloupe bread would be good? And who knew that there was such a thing as cantaloupe bread!!! I did what one of the others suggested and used 1/4 c. oil and 3/4 c. applesauce. Didn't notice a difference at all. In fact, next time I think I'll use all applesauce. I also used egg beaters instead of eggs and that turned out fine as well. Thanks for the recipe. It was great!

Slow Cooker Moose Roast

My crockpot does not have a medium setting which was a major part of the problem with this recipe (in fact, I'm not sure a lot of crock pots have a medium setting!) So, I started it out on high, but I think it made the moose way too tough. Next time, I'll just put it on low and let it go for a longer period of time. The flavor was great, but as mentioned above just too tough.

I was a little disappointed. They were good mashed potatoes but lacked the pizzaze I was expecting with a nearly perfect rating. I think I would try making them again, but adding a lot more garlic and spices.

Rempel Family Meatloaf

My husband and I absolutely loved this meatloaf!! We used ground moose meat (we're in Alaska!) and it was great. I did use the ketchup topping that one of the other users recommended and I think it may have been a bit bland without it. I will definitely be putting this in the dinner rotation. Chai Tea Mix

My husband is a tough critic when it comes to his chai tea, but he absolutely LOVED this recipe. We have it every morning mixed with warm milk. You won't be diappointed with this one. :)
