Slow Cooker Pernil Pork

Very good result for a loin roast (which I find to be a hard cut of meat t keep from drying out). The paste reminded me of a pesto consistency, sans basil of course. Will make this again.

Grilled Fish Steaks

Worked great with a nice halibut steak a friend brought back from a fishing charter in Alaska. Wish I had a freezer full of those. Seems a nice mango salsa would be a great topping

Cajun Baked Catfish

Good - followed others's recommendations and used garlic powder instead of garlic salt. Used some catfish I caught just this morning. Good alternative to frying. Will tweak the spices a little for personal tastes.

Chicken Tortilla Soup I

Perfect!! I grilled a couple of large boneless skinless chicken breast while sautéing and mixing the rest of the ingredients then chopped and added the chicken. Sliced a couple of flour tortillas with a pizza cutter into narrow strips, sprayed them with cooking spray and baked at 400 for a few minutes until crisp. Can't say enough how good this was...

MMMMM... Brownies

Very Good! Only change I made was doubling and baking in a 9x13 cake pan, plus I chopped up some cocoa roast almonds that seemed to be a great addition

Red River Beef Stroganoff

Best stroganoff I've ever made. Took some of the prior advice and marinated the thinly sliced sirloin in a mixture of coffee, soy & garlic for about 3 hours. Also used some beef stock mixture - that combined with the soy provided more than enough salt. Served ours over rice.

World's Best Lasagna

Not sure about the "World's Best" but ranks right up there as maybe the best I've ever had. Only substitution I made was shredded mozzarella instead of sliced because that's what I had on-hand

I made a couple of substitutions to match what I had in the pantry, but they still turned out great. Used Craisins instead of raisins Used buttermilk instead of the milk & sour cream combination Used Splenda instead of sugar

Apple-Stuffed Acorn Squash

Very good. I took note of the prior reviews regarding the squash drying out and solved that be brushing the exposed flesh of the squash with melted butter about half way through the baking time and then covering the pan I was using with foil. Only other changes were to substitute a little Splenda for the honey, and added some dried fruit (raisins & craisins) and chopped pecans into the chopped apple stuffing. I'm picking up another squash to do this again tomorrow

Golden Pork Chops

Basically cut the recipe in half but added the following: Half of a red bell pepper, chopped Minced garlic Add some mile to thin down the cream of mushroom soup Also as others have mentioned, I browned the chops and sauteed the chopped onion, mushrooms & bell pepper Results - Very Good

Roasted Pork Loin

Just made this for dinner. Added thyme to the spices per other recommendations. Turned out excellent. Moist and flavorful. My roast was still slightly frozen in the center so I reduced the temp to 300 and cooked it for 2 hours (internal temp 160)

Old Fashioned Onion Rings

Just made these for the first time last night. result was very good. Only minor issue I had was by the time I got to coating the last of the rings with the bread crumbs, they had absorbed moisture from the earlier rings (and my fingers)and clumped up. I also followed earlier recommendations and added some seasoning to the crumbs. Overall - Yummy!

Sensational Irish Cream Cheesecake

Baked this for Valentines Day - was a hit. I followed other reviewers advice and increased the Irish Cream to a half cup. Was concerned about not pre-baking the crust but it turned out fine.

Salsa Chicken Rice Casserole

I made a couple of modifications but it turned out wonderful. Instead of the Chicken Breast I used 4 chicken hindquarters and instead of the salsa I used about 2 cups of leftover Pico de Gallo. The raw tomatoes and onions in the pico provided some nice texture. Only other change was I added some chili powder and chipotle seasoning. Will definitely make this again.

German Chocolate Pie

This turned out great. Only changes I made were to substitute Splenda for the sugar and I used a chocolate graham cracker & chopped pecan crust instead of a standard pie crust. Delish!
