Baked French Fries II

Reviewed: Dec. 7, 2010
My kids started munching on these as I was putting them into the serving bowl and they loved them. So did the adults. Fantastic recipe and simple. I did as suggested by other reviewers and used a bag to shake the seasonings onto the fries. The only thing I would suggest is to make two batches if your crowd loves fries!

Tangy Red Cabbage

Reviewed: Mar. 2, 2009
I sauteed the cabbage in the marinade for 5-7 min. (until just warm and tender-crisp) instead of serving it cold and it was delicious and simple.

Split Pea and Ham Soup I

Reviewed: Feb. 24, 2008
This is a great basic split pea soup that leaves much room for additions. I added some veggies and country ham and it was delicious!

Wine Sauce for Seafood

Reviewed: Jan. 23, 2008
The flavors in this sauce were wonderful, very savory and tangy. We loved it over chicken tenderloins and wild rice. I did add some flour and heavy cream to it, but it really wasn't necessary. Would be just as delicious without the extra calories.

Vegetable Whip

Reviewed: Jan. 12, 2008
I made this for Thanksgiving and we loved it! The flavors were delicious together and it was great way to dress up "boring old potatoes." I'll make this one again.

Sweet Potato Casserole II

Reviewed: Jan. 12, 2008
I made this for Thanksgiving and my family thought it was tasty. All agreed the topping would have been better with either plain marshmallows or a combination of the two. I substituted 1/2 c. brown sugar for the 1 c. of white sugar. I just can't bring myself to use that much white sugar in sweet potatoes. I will make this again with modifications.

Bodacious Broccoli Salad

Reviewed: Jan. 12, 2008
We loved this broccoli salad after some modifications. The pepper was excessive and overpowering, I would suggest 1/2 to 1 tsp. Also, I found that 1/4 c. of wine vinegar was a bit strong. I used between 1/8 and 1/4 c. This is also nice with about 1/8 c. of sunflower seeds added. My family requests I make this at every family function!

Fresh Herbed Halibut

Reviewed: Jan. 12, 2008
I'm giving this 4 stars because of the olive oil. A cup is really too much. I simply brushed both sides of the fish with olive oil and that was plenty. I used halibut steaks for this and they turned out fantastic. It's such a simple and flavorful way to cook this fish. I also melted a thin sliver of butter on top of the fish after I took it out from the broiler. Even my 5-year-old loved this recipe and ate every bite!

Broiled Tilapia Parmesan

Reviewed: Jan. 12, 2008
I left out the celery salt but followed the rest of the recipe and it turned out to be very delicious! The flavors worked together well and the fish was moist and flaky. My whole family enjoyed this recipe. It's a great recipe to introduce fish to a family who's skeptical about eating it.

Peanut Beef Stir-Fry

Reviewed: Nov. 15, 2007
I used musrooms, onions and red and yellow peppers and served this over brown basmati rice. This recipe was delicious. The sauce was very light tasting and the peanut flavor was subtle and very flavorful. I will definitely keep this on hand and make it again.

Linguine and Clam Sauce

Reviewed: Apr. 21, 2007
I love this recipe because it's great on it's own when I want something straightforward, but it's also wonderful with additions or changes. I used a 10oz can of whole baby clams (it's what I had), added some fire-roasted red peppers and some Marsala wine (I'd use dry white next time, but again, it's what I had) to this sauce and it was delicious! Top it with toasted pine nuts and fresh grated parmesan and it's a bit of heaven. Thanks for sharing this recipe.

Brussels Sprouts in Mustard Sauce

Reviewed: Jan. 31, 2006
My husband and I really enjoyed this recipe. Even my toddler ate them! The only change I made was to add less corn startch (based on reviews I'd read). Sauce was creamy and very flavorful. It was a great way to dress up often boring brussels. Will make again!
