Paul's Pumpkin Bars

I read the other reviews and decided an extra can of pumpkin and more cinnamon and spice was needed. 2 Cans of pumpkin, 1 T cinnamon, 1/2 t pumpkin pie spice and 1/3 cup less of sugar. I think even less sugar (about 1 cup) would be fine.

Easy Lemon Cake

Like so many others, I modified this recipe to our tastes. I did use the yellow cake mix, but I used 3/4 cup fresh lemon juice in place of the water, 2 T fresh lemon zest and 1/2 t of extract. 1/2 cup oil and 1/4 cup greek yogurt in place of all oil. Thanks for the easy, versatile recipe.

Irish Soda Bread

Great recipe. I left out the caraway seeds (personal preference). Bread was great the day I made it and great toasted the day after. I will make this again and use whole wheat pastry flour to make it a little healthier. Also, we didn't have sour cream so I used nonfat Greek yogurt with perfect results.

Black Bean Hummus

This is great, exactly what I was looking for. I used 2 cups of black beans I cooked myself instead of canned. I would highly recommend NOT adding the salt if you are using canned beans. The salt from the olives is plenty. We will use this as a dip, sandwich spread and a filling for enchiladas--this is so versatile. Thank you for the recipe!

Rhubarb Bread I

Recipe is delicious as written--5 stars. I substituted fresh strawberry puree for half the oil and it was wonderful. The next time I make this I will use strawberry puree for all the oil and reduce the sugar by 1/4 cup.

Roasted Garlic Cauliflower

I need to double this recipe next time, as it's fabulous and the entire family eats it with no complaints. I didn't change a thing. Baked it in an enameled cast iron roasting pan at 450 degrees for the entire time and it browned beautifully.

Playgroup Granola Bars

Super versatile recipe! I used 1/3 cup sweetened vanilla protein powder instead of the brown sugar (I'll use 1/2 cup next time), whole wheat flour and agave nectar and honey. Also used a combination of 1/3 cup oil and applesauce to = 1/2 cup. I only baked them for 20 minutes and they were perfect. There is so much you can do with this recipe!

Chunky Pecan Pie Bars

Fantastic. I add 1 T of bourbon/brandy and more pecans. I also sprinkle the chocolate chips on top of the crust before I pour in the filling (use less chocolate). These are always a hit--parents crowded around the platter at a school event and ate them all.

These are so simple to make and a great treat for kids to help with. I used 1 cup cashews instead of 1/2 cup. These ARE very sweet, so make them small. I think you can do a lot of fun variations with this recipe; next time I'm trying white chocolate chips, dried cranberries and pecans.

Buster Bar Ice Cream Dessert

Fantabulous! Wow! I didn't change a thing. The fudge is fantastic and I will make the fudge to put on ice cream instead of buying the awful stuff from the store. I put a layer of whipped cream over the fudge after the fudge layer chilled and sprinkled extra cookie crumbs on top. Thank you for this amazing recipe. You will NEVER buy a store bought ice cream cake after you have this.

Butternut Squash Soup

I look forward to autumn so I can make this soup! I use 1/2 the amount of cream cheese and real chicken broth. This is a wonderful recipe and the soup freezes and reheats wonderfully.

Whole Grain Waffles

Excellent! We love these waffles and I won't search any longer for a healthy waffle recipe--this is it. I used quick oats instead of wheat germ and no white flour, also added cinnamon. I used basic whole wheat flour, not pastry flour, and they turned out great.

Colleen's Slow Cooker Jambalaya

This is a great recipe the entire family enjoyed. I used leftover chicken, pork and turkey kielbasa. I also added an extra green pepper and a yellow pepper, in addition to another small can of diced tomatoes. The seasonings were perfect, although I didn't use the cayenne. Added 1 1/2 cups of instant brown rice the last hour in the crockpot. Thank you for a fantastic recipe.

Monkey Bread

"Super Triple Awesome All Stars" is what one of my sons had to say about this simple recipe. My 8 year old made it with my guidance and we all enjoyed it. We used more nuts than called for and next time we'll add raisins. I used bread dough, as it's what we had.

Oatmeal and Wheat Flour Blueberry Pancakes

These were wonderful, they were surprisingly light and fluffy. I used whole wheat and oat flour instead of the all-purpose. I also added cinnamon and vanilla, as many other reviewers have. My kids requested chocolate chips instead of blueberries -- these pancakes were a big hit! I doubled the batch and froze the extras.

Captain Crunch Chicken

This would be a 5 star recipe, but I had to alter the recipe after reading the reviews and with the changes I made our family gives this 5 stars. I used half captain crunch and half corn flakes and used the food processor to make them very fine. I added 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon black pepper and a pinch of salt. I dipped the chicken in egg before I rolled it in the cereal and seasoning mixture. I bake this on an elevated rack so the bottoms don't get soggy. I also made a honey mustard dipping sauce from this sight and my husband says "it's too good!"

Blonde Brownies I

These were good, but we didn't think they were amazing. Next time I will either try another recipe; if I use this one I will use less vanilla....the vanilla was too prominent. Like many others, I mixed the chocolate chips into the dough and sprinkled some on top.
