Kale Chips

I was desperate to find an alternative to potato chips and heard about kale chips on a cooking show. OMG, as a diabetic, this is my new go to snack. So easy! I am addicted to salt & vinegar chips so in place of the sherry vinegar I used cider vinegar and in place of salt as I am on a salt-restricted diet, I sprinkled onion powder on it. I had a problem with my oven crisping the kale so I had to increase the temperature. Next time I am going to use Betty's suggestion in her review of baking for 9 mins and turning off the oven, but leaving the kale in for about an hour.

Chef John's Tzatziki Sauce

Thank you Chef John!! It was requested that I serve lamb breast for dinner. I thought couscous and tzatziki sauce on the side and found this a wonderfully simple recipe. The only problem was I had no Greek Yogurt left and no way to get to the store to purchase any. Thus I had to use light sour cream. It was delicious(I can't wait to make this with the Greek Yogurt!!)

Hot Chocolate Mix

This is such a good recipe. I replaced the powder milk with powder creamer and it made this so much more creamier. I also like my cocoa rich tasting so I added 3/4 cup of unsweetened cocoa.

Portuguese Fried Bread

when I was a young girl, my sister married a full-blooded Seneca Indian. She used to make what we knew as Ghost Bread. I could not find this recipe here so I searched Fried Bread. This is the ghost bread recipe minus the sugar!!! Thank you!!!!!

Quick Pasta Carbonara

I used this for a spaghetti squash casserole. I replaced 1/2 the bacon with turkey bacon added chopped onion to the bacon as it cooked. I used 1/3 lite cream cheese and skim milk with good Parmesan. After making the sauce, I added the spaghetti squash (cooked, seeds removed and removed from skin) mixed it thoroughly together, placed it in a greased casserole. I added 4 pats of butter on the top with italian bread crumbs and baked it for 45 mins in a 325 oven. IT WENT OVER SO WELL, THEY WERE FILLING PLATES AND BOWLS TO TAKE SOME HOME WITH THEM!!! Thank you for this recipe!!!!!!

Crackle Thins

Scottish Shortbread III

I love the simplicity of this recipe! I have always made them and found these can be a blank canvas: You can add pecans for pecan sandies; fresh orange peel for a citrusy good shortcake; dipped in melted chocolate...But my personal favorite is the simple shortbread.

Corn Fritters

I had never made corn fritters before (I KNOW, Whodda Thunk!) The timing was such that I could easily incorporate it into my chicken dinner meal. The ingredients were simple. The only thing I changed is I added 1/2 tsp onion powder.
