Out of this World Turkey Brine

Reviewed: Dec. 8, 2011
Amazing!! We will always do our turkey this way from now on..I'd been wanting to brine for a long time and glad I finally did it. Hubby smoked it on the grill and it was fabulous. I need a 10 star rating scale. Thank you!

Valerie's Fruit Dip

Reviewed: Dec. 8, 2011
I took this to a Thanksgiving dinner for extended family/friends. Everyone liked it including the kids. The only problem I had with it was that it was too much like pudding/custard. I was a bit disappointed to have to use *extra* ingredients. I could've just stuck with pudding mix.

Grandma's Green Bean Casserole

Reviewed: Dec. 8, 2011
I guess I am just a fan of the *new way* with condensed/processed ingredients. I did not care for this *old fashioned* version because I felt it was too bland. However, I am not rating it poorly because of that. It was a hit at Thanksgiving with the extended family/friends. So it deserves at least 4 stars on their behalf.

Pumpkin Dip

Reviewed: Dec. 8, 2011
I thought it was just okay but my family LOVED it! I have to add that I am not much of a pumpkin fan so that's a bit of bias on my part. We served it with graham crackers on Thanksgiving.

Yummy Sweet Potato Casserole

Reviewed: Nov. 24, 2011
I'll never do it again! I will never make sweet potatoes from a can again. I'm a little ashamed to admit at my age (21 and holdin') that I've never made 'from scratch' sweet potato anything..Well all that changed today..My family LOVES these silly lookin' things. I did follow the advice of some other reviewers (thanks y'all!)..I baked them at 350 degrees F for about an hour to 1.5 hours. I let them cool a bit, skinned, and cubed them into the bowl of my Kitchenaid mixer. Instead of 1/2C white sugar..I added 1/4C white, 1/4C brown, 1 full tsp of vanilla, and 2 TBSP of orange juice. I had to leave the pecans out of the topping (terrible, I know) because hubby has a tree nut allergy. I added a few mini-marshmallows to round out the topping (although I didn't think we needed it but my kids did)

White Cheese Chicken Lasagna

Reviewed: Mar. 13, 2011
This is very good. I didn't add or omit any ingredients but I did adjust amounts here and there. I also marinated my chicken breasts in Zesty Italian dressing overnight, grilled them, and then sliced them. I used a 16 oz. bag of frozen spinach but will probably add less than that next time just to suit our tastes. Also, I will probably make it in a larger pan next time. It filled the 9x13 to the brim! I put a baking sheet on the rack under it in the oven. I will probably only make this a couple of times a year but, boy, will I look forward to those times!

Tacos in Pasta Shells

Reviewed: Mar. 9, 2011
These were very good. To me it was a little time consuming. I used a little more meat and cream cheese because 3 oz just didn't seem like it would be enough to bring the mixture together. I would say I used about 5 oz give or take. I brown my meat with taco seasoning, green chilies, and onions. I used a 16 oz jar of original Ortega brand taco sauce and it was more than enough. Next time I may only use 12 oz. Be sure to pour a little in the bottom of the pan before placing the shells in. This recipe is simple, good, and economical!

Best Brownies

Reviewed: Jan. 20, 2011
I don't think I will ever make a box mix again! I doubled the recipe except for the eggs. I only used 3 instead of 4. I mixed the batter with a wooden spoon just until combined then spread in a 9" x 13" glass pan. I have an electric stove and baked these for approximately 30 min. We like 'naked' brownies so I didn't use the icing recipe. I might try it one day though just to change things up! Thank you for sharing this recipe!

My Amish Friend's Caramel Corn

Reviewed: Dec. 25, 2009
This was my first time to make caramel corn. I made it exactly how it was written except I used 1 big turkey roasting pan instead of 2 pans. Since it was my first time making caramel corn, I wasn't sure if I should cover it or not. I chose not to cover it and I'm glad I didn't. It had a wonderful color to it! This will be a regular at our house for movie nights & holidays! Thank you!

No Time to Cook Chicken

Reviewed: Dec. 13, 2009
We really liked this recipe. Although, I did alter some things. After reading many of the reviews it sounded like it might be a bit bland. So, I added half a white onion (chopped), garlic powder, seasoned salt, paprika, & black pepper. I added a bag of frozen California blend veggies. However, forgot to add the sour cream until I had everyone's plate made. No worries, we just added a small dollop on top & mixed it in. Served it over cooked egg noodles. Very tasty & filling!

Great, simple recipe. My family and I loved these cinnamon rolls. I used a powdered sugar, milk, & vanilla glaze drizzled over the top.

Almost Stuffed Peppers

Yay! I found a recipe that is not near as much work with the same great taste! The only thing I changed was I added a can of tomato sauce with roasted garlic. Sprinkled some cheese on each serving. A family favorite.

World's Best Lasagna

Reviewed: Oct. 4, 2009
Best lasagna recipe I've ever used, hands down! I didn't boil my noodles, I soaked them in hot water for about 20 min. like others had recommended. I also left out the fennel because I don't care for it. Those are the only things I did to this recipe and it was out of this world! Thanks for sharing!
