Grilled Steak and Potato Salad

I used left over roast beef instead of steak and it turned out good. The servings size was good for my husband but a little too much for me. The dressing was a little oily. I will try it again and add more wine vinegar or lemon. A little too much time in the kitchen for a hot summer night as well. Next time I will prepare the ingredients the ight before or in the morning and let them cool completely before serving. Its a keeper with these minor changes.

Chicken Breasts with Plum Salsa and Basmati Rice

I hate reviewing recipes when I don't follow them to the letter but I have to on this one. I made 2 changes based on previous reviews. I used jalapenos instead of habaneros. I knew that would be too hot. I also made this with pork. WoW Great flavour combo with the pork, rosemary and salsa. The only other thing to mention is the portion was way too much for us. The salsa alone was enough for 4 people. I will definitely make this again.

Breakfast Sausage

I think this recipe was waaaaay too salty. For my taste it had enough spices. I added a little ground fennel so maybe that's what made mine tastier. the heat from the red pepper was just right. I'll make this again but with half the salt next time.

I loved the flavor but found it a little salty. I will use low sodium soy sauce next time. My family loved it. I am going to try it on beef next time like another person suggested.

Sweet and Sour Sesame Seed Salad Dressing

I found this a little too sweet for my taste. I added a little more soy sauce to cut the sweetness and a bit of ginger. Then I found it to be very good.

Vietnamese Beef Pho

I have tried this a few times and find that the canned beef broth works the best. Homemade or the cubes just don't cut it. I usually serve with fresh spring rolls so half a serving is enough

Linguine with Chicken and Sauteed Vegetables

This was excellent. I did double the vegetables to make it healthier and only used a 1/4 cup oil by mistake, but that was definitely enough and made it even healthier. This is going in my favorites file.

Spinach Stuffed Chicken Breasts

Too much spinach and not enough feta. the chicken was dry and the bacon was not crisp. I will try this again but change the proportions to see if I can get it to work. Plus there were beautiful pan drippings which should be made into a thin sauce to perfect it.

Bermuda Spinach Salad

The dressing was good but I usually make a hot bacon dressing for my spinach salads. This looked easier so I tried it. Doesn't compare to the hot version but is good for the ease of preparation. I thought the onion was overwhelming but that might have been the onion I used.

TOO MUCH GARLIC FOR ME SO I USE ONLY HALF. I MAKE UP THE DRESSING AHEAD OF TIME AND STORE IT IN THE FRIDGE FOR LATER. I DON'T HAVE TO BUY EXPENSIVE STORE BOUGHT DRESSING ANYMORE.

Summer Vegetable Ratatouille

I've tried allot of ratatouille recipes and never found one that I loved. This was great. I peeled the eggplant since it sometimes is bitter. I cheated a little too. I ran out of olive oil and substitued 1/4 cup butter and substituted canned green chilies and canned tomatoes. This is the first time my kids not only liked it, they loved it.
