Cream Puff Shells

These were fabulous! I made them bite sized and filled with stabilized sweetened whipped cream. They were the hit of my daughter's 'high tea' birthday!!

Egg-Free Dairy-Free Nut-Free Cake

I have been making this cake for years! The only difference is that my recipe does not use chocolate chips. The version that I know is called Crazy Cake and I learned how to make it in Home-Ec way back in the mid-seventies!!! It is my 78 year old mother's favorite chocolate cake.

All I can say is WOW! Who knew something so simple could be so good. This one is definitely going to become a regular menu item for our family "Mexican fiestas!"

Aloo Phujia

This is very good, but it seems to be somewhat bland given the amount of spice that the recipe calls for. I have made it twice now and I tweaked the spicing a little to suit my own tastes adding a pinch of cinnamon and about 1/2 tsp. of curry powder along with tripling the cumin and tumeric. I don't know if the leftovers are good or not . . . I never have any!

Easy Soda Cracker Bars

Reviewed: May 29, 2007
Not half bad. I read an earlier review that commented on the lack ofsaltiness in the crust layer, so I added about 1/8 tsp salt to the cracker crumb-butter mixture. I also threw in some butterscotch chips along with the chocolate chips. Very rich with a salty note to the crust that helped to balance the the sweetness of the filling. Next time I think I'll leave the butterscotch chips out though.

Carrot Cake Muffins with Cinnamon Glaze

Reviewed: May 1, 2006
These are GOOD! I just got them out of the oven and couldn't wait to taste. I added 2/3 cup of chopped walnuts and since I didn't have any crushed pineapple I substituted a can of mandarin orange segments that I crushed up with my fingers. These are great. I don't know if they're going to last long enough to be glazed!!!
