Buffalo Shrimp

This was a big hit! It was delicioso! The only thing I did differently was I skipped the cayenne pepper and only tossed the shrimp in the flour and seasonings just once. And I used buffalo sauce instead of the hot pepper sauce. Turned out excellent. I used a little over 30 shrimps and it was more than enough. I thank you for having such a wonderful recipe and sharing it with us. If I have a family dinner party to attend opr having guests over my home....this will def be on the table! YUM!

Jalapeno Popper Mushrooms

So I have already put a review for this recipe but its ooooh so good that it deserved another! LOL. Today is New Years Eve and my sissy in law is having it at her house. And from all the ranting and raving they have heard about these hot little numbers, she asked me to make some for tonight! I was like "YUM! Ok!" My husband kept telling everyone how yummy they are. I actually had a few guests over a little over 2 weeks ago and they all seemed to really love them!! I love making these. They are super easy and fun. Tip: bake the mushrooms before adding the mixture, watch all the water that comes out of these little guys, pat them with a paper towel to dry them up and add mixture and pop back in the oven. They really will get soggy if you dont do this. YUM! Happy eating people!!!

Jewish Eggplant Lasagna

I was a little skeptical about making this. I am not jewish but I did have a couple over for last night who happen to be jewish and he is strictly on a kosher diet and a vegetarian and the other well, is jewish as well but isnt as strict in her diet. So I said "what the heck let me try this out". And I am so glad I did. I ended up using about 2 small-medium sized eggplants. I am so glad I used the matzo meal instead of bread crumbs. I think that is something that I will be using often. That was my first time having matzo meal. I didnt just use red pepper I also added a little bit of yellow and green. I also used 2 packages of a mushrooms medley that were mixed with all kind of exotic mushrooms and oooh so yummy. My husband and I love mushrooms especially the mixed medley kind. About $4 bucks a package. The only thing I would do differently is layer the mozzarella between the veggies and eggplant. And 1 package is not enough. I used 2 and I wish I had bought more. But the exciting thing for me was that my guests loved it and even asked for some more to take home with them for lunch tomorrow. I am not kidding! I was like "sure!" I was so happy knowing I had pleased my finicky guests lol. It was fun. And would gladly make this again. It was a lot of fin making sort if like a mini art project. I wanted everthing to look perfect! Happy eating people!!! xoxo

Guacamole

This was a big hit! Everyone loved the freshness. I let it sit in the fridge for 5-6 hours. I didnt use a lot of cilantro....I dont know maybe its because Im pregnant- but I hated the smell of fresh cilantro. ICK! But I did use a little, I didnt use any onions. I used 4 avacados, 2 limes, no cayenne pepper, and I just kept tasting to make sure it didnt lack any salt or if it needed more lime. It was so refeshing and yummy! Will def make it again. It was a lot of fun and a great arm workout while mashing the avacados lol. :) Happy eating! XOXO

Key Lime Pie VII

This was a really big hit for my two dinner guest that my husband and I had last night. The only boo boo I made was I used regular limes instead of the itty bitty keylimes. :( But it still turned out wonderful. I used 2 cans fat free eagle brand (sweetened condensed milk) that was about 2 cups and MORE than enough. Even though it was a big hit, I feel I should of used 2 more limes. It was just perfect, but I think a can and half is more than enough. But I think the fact that I made the mistake of not using the keylimes might have something to do with it. But all in all, a great hit. Such a wonderful and easy recipe. Next time, I will be using keylimes lol! xoxo happy eating people!

Radio Days Cherry Custard Kuchen

This was so much fun to make! I am eating the Cherry Custard Kuchen right now as I review this amazing recipe. Fresh and hot out of the oven and I love it! Things I did different: I used fresh cherries instead of canned. I had a whole bag of cherries that my husband and I didnt touch-and I just couldnt throw them away. So I kept searching and searching until I came across this recipe. And I have to admit, I was a little scared. I kept going back and forth and debating if I was brave enough to make it. And well, I was lol. I really am shocked at how much I love this little dessert. I wasnt sure if my husband will like it, but I'm about to take his dinner to his work (he works late tonight) and we'll see what he has to say. All I have to say is baby and I are really enjoying it! (4 months pregnant) If you are looking at this recipe thinking there is too much work involved, I promise you-there isnt. And try something new, I did and look I love it! Im a fan. xoxo happy eating!

Strawnana Bread

I was a little skeptical about making this bread/ for me, a bundt cake. As I was mixing all the ingredients, I was really nervous. It didnt look....well....good. But I wanted to stay positive and just roll with it. I had a lot of strawberries and bananas and boy was I bored. So I decided, lets go ahead and make something we have never made before. And I am glad I did. The only things I did differently was I didnt use nutmeg, no nuts, and and instead of 2 cups of sugar I used a little less. I also added a little pure vanilla extract. The only thing I would do differently is I would NOT mash the strawberries. You can still kind of see them and taste them, but it would of been nicer if the pieces were a little bit bigger. Would I ever make this again? OH yeah! I had it for breakfast this morning and had a slice last night....fresh out of the oven. It was refreshing, light and not over powering. Im a fan. I wonder what it would be like with blueberries and strawberries? I guess I will find out the next time I am in bake mode lol. Happy eating! XOXO

Double Layer Pumpkin Cheesecake

I made this a few week ago for a bunch of my husbands friends and their wives. Men are not like women, they dont run to the dessert table like we do. So I am not sure how the men felt, but I do know that the women we head over heels in love with this cheesecake! And so am I! Actually I take that back, my husband who isnt a cheesecake fan really enjoyed this. I am making it again tonight for my sissy in law who is having a mini new years eve bash at her home. It is so easy to make and its not too sweet. Happy New Years everyone! Wishing you all the health and happiness in the world!!! And most of all.... HAPPY EATING!!

Seasoned Swai Fish Fillet

I came across this type of fish in the grocery store today and what caught my eye was that I had never heard of it and it was "Wild caught". I never by farm raised fish and lately thats all I have been seeing as well as color added to salmon?? So with that being said, I made a few changes. I hate cilantro. I hate the smell of it and the taste. Its just nasty to me. So instead of cilantro I used dill. I love the smell of dill and taste. I usually use dill with any fish I bake in the oven anyway. And instead of one tablespoon of lemon juice I used juice from a whole lemon, without measuring I chopped up a nice size clove of fresh garlic, instead of paprika I used a nice dash of red cayenne pepper, organic garlic powder, salt and pepper and used real butter instead of margarine. And I totally ditched the white wine. And as I was heating the mixture in the sauce pan, I gave it a little taste and it was so yummy. I actually am a fan of the fish too. Nice, light and wild caught in the US....doesnt get any better than that. And YES! I would soooo make this again! YUM!

A Good Easy Garlic Chicken

So my a little over 2 month old son was giving me a hard time lol putting him down for a nap. But finally I did and needeed to make something quick. I had some chicken thighs (my husband is a fan of thighs and I am of chicken breast) that I had freshly bought the night before. This was soooo easy to make and my husband really liked it. Actually he said "babe this is really good!" BUT I did tweak it a little. I used half butter half olive oil. I sauteed mushrooms first because chicken alone is just icky and plus my hubby loves mushrooms.skipped the season salt and used fresh pepper and sea salt.I just kind of put a dash here and a dash there of the onion and garlic powder. And then right towards then end right out of the pan and onto the plate, I squeezed a fresh lemon on the chicken and mushrooms. And made a mini greek salad for him as well. Loved it. Def going to keep this recipe in mind wheather I am in a rush or not. A total winner and total no brainer. If you mess this recipe up.....*sigh* there is no excuse to mess this one up. Lemon Cupcakes

OK, so here it goes. So I bought the most adorable spring cupcake moldlings and wanted to do a trail run for the cupcakes before actually making a real batch for Easter Sunday. While the recipe is super duper easy and fun to make, I dont believe it had enough lemon taste. They tasted more like a bread than a cupcake for some reason. I didnt everything the recipe says and I even added more lemon zest and juice and still not lemony enough for me. Now the Lemon cream icing I mixed by hand. I did not use a mixer. And although it took a lot longer I decided to do it anyway. And I am glad I did. I added a lot more lemon juice then the recipe calls for. It turned out really nice and fluffy. Now am I going to use this recipe for Easter Sunday? No. I am glad I gave it a whirl and I am glad I had all the ingredients at home.....but not yummy enough to tempt me to make them again let alone for my whole family. I'll have to look for something else. But I am so glad that some of you enjoyed the recipe more than some of us. Happy eating! xoxo renee 3.27.2013

Chicken and Bok Choy Soup

Ok so this was super easy to make and I had some Bok Choy that I was dying to get rid of as well as other veggies so I decided to give it a whirl. I added mushrooms and bought a whole chicken already prepared from the market (3month old keeps me VERY busy lol) and all I had to do was shred it off the bone and throw in the pot. I really enjoyed the soup and def is worth making. A little on the sweet side for some reason I think I would throw in a little squeeze of fresh lemon just for a little zing. So all in all, very good. Not 5 star good but def woth the 4 stars. My husband says the same thing. Happy Eating people!!!! xoxo

Harvest Pumpkin Cupcakes

PLEASE READ! Ok so this was a great and simple recipe. Totally worth the calories.... BUT you def don't need 4 cups of powdered sugar!! OMG soooo not yummy! I had to add some milk and orange juice as well as a tad bit more of cream cheese. My husband is not a cupcake fan....he thinks he is to "manly" to eat a cupcake lmao but those days are over. I caught him taking two to work with him as a snack lol! Thank you for finally converting him to cupcakes or at least weaning him into them. I love love love cupcakes!

Fluffy Pancakes

OMG!! This totally deserves more than 5 stars! I know you are reading this and probably telling yourself "come on, it cant be that good". But I am telling you it totally is! So easy to make and clean up after. It is light, fluffy and after eating about 3 pieces, I wanted more. But I thought ok Renee you and baby are happy now (4months preggers) you have satisfied your cravings. Baby has been craving pancakes for the last week and I always feel so sluggish after eating them. But this recipe is really great. I don't feel like I over ate and I feel great. This is a recipe that is for keeps. I kept the size of the pancakes at about 4-6 inches wide. They weren't that big. I saved the rest for my niece who is a super picky little 8 year old and I know she will be a huge fan of this!! I don't know who posted this recipe, but if you do read this....thank you so much and bravo!! Yum!!! xoxo renee!

Buttermilk Pie

I love love love this recipe. It's so simple and easy to make! I made my first pie a week ago and split it in half and sent the other half with my husband to my mother in laws house, her opinion matters lol. My sister in law and mother in law loved it but complained that it was a little to sweet. And I have to agree. I am about to make two other pies tonight and am def using less sugar. But other than that YUM!!
