Been married almost 9 months/ My husband is def spoiled when it comes to daily home cooked meals. So I have to get it crackin. So far, so good! Ive always loved cooking. It relaxes me.

I love cooking everything. I love browsing Allrecipes.com and whatever I am in the mood for or sounds yummy, I'll make. Or of course, whatever my husband requests. But he isnt picky.

Chinese Chicken Fried Rice II
I don't think it gets any easier than this! I am a personal chef for my 15 month old daughter and my 24 month old son (lol) and I am so sick and tired of the same old stuff. My son is a picky eater but loves rice so I thought rice, veggies minutes to make....great! I am obsessed! Ok, so here's what I did.... I am Chaldean American,(parents migrated here in the 60's from Iraq,Catholic Minority) so everything we literally eat has rice. I had a lot of white rice left over in the fridge, had some left over chicken thighs and nothing went to waste. I was pretty proud of myself for reusing and well, recycling. Ok, so I first melted butter in the pan, I had chopped up fresh garlic and onion. I cooked them on low heat until they got soft. I added broccoli chopped up really small, corn and fresh sweet peas and chopped up the chicken really fine. I added more soy sauce then what the recipe called for and just a pinch of pepper since this is for my babies and not me. I skipped the eggs because my babies hate it (even though I love it) and they are getting their protein through the chicken and the simpler the stir fry is, the more they eat and that's my goal. I just tasted is, and could gobble the whole thing up! How can something so simple taste so yummy in the tummy?! Had this dish been for me and my husband I would of added every vegetable and added baby shrimps or something. Happy eating people! xoxo Renee

Buttermilk Pie
I love love love this recipe. It's so simple and easy to make! I made my first pie a week ago and split it in half and sent the other half with my husband to my mother in laws house, her opinion matters lol. My sister in law and mother in law loved it but complained that it was a little to sweet. And I have to agree. I am about to make two other pies tonight and am def using less sugar. But other than that YUM!!

Fluffy Pancakes
OMG!! This totally deserves more than 5 stars! I know you are reading this and probably telling yourself "come on, it cant be that good". But I am telling you it totally is! So easy to make and clean up after. It is light, fluffy and after eating about 3 pieces, I wanted more. But I thought ok Renee you and baby are happy now (4months preggers) you have satisfied your cravings. Baby has been craving pancakes for the last week and I always feel so sluggish after eating them. But this recipe is really great. I don't feel like I over ate and I feel great. This is a recipe that is for keeps. I kept the size of the pancakes at about 4-6 inches wide. They weren't that big. I saved the rest for my niece who is a super picky little 8 year old and I know she will be a huge fan of this!! I don't know who posted this recipe, but if you do read this....thank you so much and bravo!! Yum!!! xoxo renee!
