Tiramisu II

Amazing. Some of the best tiramisu I have ever had. Definitely double the rum & coffee and let everything set overnight.

Savory Sweet Potato Fries

This is so delicious. It's worth baking until the potatoes are translucent and crispy, even if they get a bit burnt around the edges. We have used fresh rosemary and dried; it's great either way. We slightly prefer the dried, but we dry out the herbs ourselves, so it was very fresh.

Roasted New Red Potatoes

Very good and easy. I added rosemary and garlic. Do be certain to heed the directions about putting the potatoes on the lowest rack of the oven. The temperature is perfect.

Roast Sticky Chicken-Rotisserie Style

My husband and I make this once a week. We have roast chicken one night, and then have another 2-3 chicken based meals. It's easy, delicious and very cheap. The only reason I don't give this 5 stars is that nothing about the chicken strikes me as rotisserie-like. I sure is delicious, though.

Tender Barbecued Chicken

We used chicken leg quarters, because they were on sale. Used diet cola and no lemon, since that was the state of our refrigerator. We will add this to our weekly line up. The house smelled so good I was salivating at dinner time, and the meal was to-die-for! We live in the South, where BBQ abounds, and I would say this was restaurant quality. Strange it could be so simple and taste so awesome, but true.

Barbie's Tuna Salad

I made this exactly as written and served it on toasted croissants with cheese. I was very happy with the amount of mayo and dill. The dill really makes the sandwich. My husband and I were still talking about how delish dinner was a few hours later. That's longer than I ever thought I'd talk about tuna salad in my life. I had leftovers for lunch today, and it is even better with all the flavors mingled. We will keep this on hand in our fridge for lunches and snacks. I can see how it would be great with crackers. Very easy and satisfying as well, and a simple source of healthy protein during the day.

Pesto Tuna Salad with Sun-Dried Tomatoes

This recipe is full of lean protein, healthy fats, and rich delicious-ness. So, so good. If you use commercially prepared pesto, be sure to check for hydrogenated oils. Good brands will just have extra virgin olive oil.

Kiwi Raita

This is a delicious, easy recipes that puts the finishing touch on your Indian meal. The addition of kiwi is inspired. I serve this with the chickpea curry recipe, and my husband thinks I spent hours in the kitchen. Diner is prepped in 20 minutes.

Black Beans and Rice

I took the advice of others and added a can of diced tomatoes with the black beans. I increase the garlic and top with sour cream. Delish! I make this once a week, and my husband always raves.

Creamy Caramel Flan

This is a fantastic recipe. Moderate difficulty. Extremely pleasing to my mother-in-law, who is "the expert" on "authentic flan." She approved of the cream cheese addition, as did my husband, who has never liked flan before, but said several times that 'this is the best thing' he's ever eaten!
