School Lunchroom Cafeteria Rolls

Delicious, soft, plain white yeast rolls. If you are looking for a basic soft roll for dinner, this is it! I halved the recipie (I didn't have 10 cups of flour on hand!). I also cooked enough for dinner, and froze the rest of the dough in balls so I can have fresh baked brea on another evening. Easy and yummy!

Super-Delicious Zuppa Toscana

This tastes just like the restaurant version! Very spicey, so if you like your soup a bit more mild, leave out the red pepper flakes. I used the spinach, as per the recipe. I used 6 large russet potatoes, and had to add another can of broth. It made way more than 6 servings, I'd say more like 10, and it heats up well. I decided to dice my potatoes so that they would stay together, instead of fall apart in the soup. A definate keeper.

Chicken Penne with Asparagus, Sun-dried Tomatoes, and Artichoke Hearts

Extremely tasty! I don't think the butter is necessary, making this a healthy and yummy meal. Very easy to put together. I used a package of chicken thighs that I cut up and cooked, it worked just fine!

Broccoli Casserole

This was truly awesome! Creamy and delicious! I usually don't make any major modifications, trusting that the cook knows what they were doing, but in this case I did make a small one. I used 1/2 cup mayo instead of 1 cup (that just sounds like too much) and added a cup more of the shredded cheddar (making it 2 cups). I also took another reader's suggestion and used cheez it's instead of butter crackers, but that was just because I forget to buy the crackers! SUPER YUMMY!

Pesto Chicken Florentine

Will definately make this again! My whole family loved it. Definately use a full bag of spinach, it cooks down to hardly anything. Also, don't forget the diced tomato on top, it really is necessary!

Marinated Grilled Shrimp

This is the BEST marinated shrimp i have ever eaten! I highly recommend it! I threw my shrimp in the marinade in the morning, and so all i had to do was grill them up at dinner! I popped them off the skewers and layed the shrimp over a simple salad. I put out dressing, and nobody used it it, because the shrimp were that delicious! 5 stars!

Pineapple Chicken Tenders

This is outstanding! Even my 5 year old gobbled it up without a complaint! I took the advice of others, and added 1/2 tsp ground ginger, and 2 tsp of jarred garlic. The marinade is worth saving and boiling to serve over the white rice! It's super yummy!

Monkey Bread

This Tastes delicious, and looks impressive for guests. I great dish for the kids to help with, and it's fast and easy! I followed the recipie exactly, including the regular biscuits and apple butter. I think other raters may have found them too sweet because they substituted the biscuits for cinnamon rolls. A good quality apple butter really makes the dish delicious. It makes enough for a party, and doesn't reheat nearly as well as when it first comes out, so I suggest keeping this recipie for when you have guests.

Chocolate Pound Cake I

If you love pound cake, you'll love this! Someone had reviewed that this cake was dense and heavy. Well, yeah - it's a pound cake! I had to cook the cake a full 15 minutes longer than the recipie states, maybe it was my oven, but it was still batter in the middle until I left it for a bit longer. Super delicious!

Roast Beef and Gravy

This was the BEST pot roast I have ever eaten! I think the secret is that there is plenty of gravy, which keeps the meat moist. It was falling apart after 8 hours, super tender! I will definitely make this again. The best part is that you can throw this together before you go to work, it's so easy.

Carrot Cake Cookies

This recipe was DELICIOUS! The cookies come out just like cake. A nice fluffy texture. No icing is necessary, but it might be a fun twist. I made them exactly as the recipe states and it was very good, which is why it deserves 5 stars.

Zucchini Patties

These are OFF THE HOOK delicious. Seriously, I don't ever want to eat anything else again. I squeezed the zucchini out really well, added a few shakes of Italian style bread crumbs, and 2 dollops (maybe 2 tablespoons?) of pesto to the mix. Some had said they were bland, so really only did it to ensure flavor. Perhaps they were fine without! I served them with spinach and squash pasta and vodka sauce. DELICIOUS!!

Peanut Butter Cookies IX

This was by far my favorite peanut butter cookie on this site! I used 1 cup of all purpose flour, as I did not have whole wheat flour on hand. They were divine. I used a pampered chef medium cookie scoop, and got 2 1/2 dozen cookies, so I must have made them much bigger than the original recipie. They do not seem to spread very much, and I did not press them down, so they came out like delicious, soft and crumbly mounds. I highly recommend this recipie!

Greek Lazy Lasagna

This is totally delicious! This is not anything like lasagna. It has a very light sauce, one that you would expect from a light summer meal. I would use less pasta next time. I wished there was more of the "good stuff" on every forkful, so I would maybe only use 3/4 of the box instead of the whole thing. I will also add toasted pine nuts next time! Yum! I also used tomato and basil feta cheese for more flavor. Update: made it again with 1/2 a box of Bowtie noodles and it is AWESOME!

Pumpkin Bar Icing

This was by far the creamiest, most delicious cream cheese icing I've ever made! So easy to make, and only a few ingredients. One of the previous reviewers said it is more like a frosting, and they're right. This is in no way an icing. Delicious!

Lentil Soup

Chock full of lentils. I gave it 4 stars because I had to add ALOT of vegetable broth as the beans swelled. This was just to keep them moist, you can eat this stew with a fork!

Ground Beef Enchiladas

I was skeptical about these ingredients, but this turned out pretty good! Not very spicy, and very creamy. I used sour cream instead of yogurt, and a can of diced chiles instead of the jalapeño. I used WAY more than 6 tortillas. I think I wound up with 12. Perhaps I didn't fill them up as much as I should have. Pretty good for a family dinner.
