Smoked Salmon Mousse

I bought smoked salmon from Trader Joe's and was looking for an easy spread recipe. This is IT!!! I omitted the roe, and added one finely sliced scallion. Served with an assortment of whole grain crackers, this elegant and delicious mousse was the star of the party. Even my children (13, 11, 8, and 2) loved it!

Delicious Rosemary Bread

This is a great recipe and yields a delicious loaf of "artisan" bread. I used organic whole wheat flour, substituted olive oil in place of the butter, and kneaded in a 1/4 cup of both chopped red onion and chopped sun-dried tomato for extra flavor and texture. We sliced and served with olive oil mixed with salt and pepper for dipping. The bread was the perfect accompaniment to a bowl of homemade vegetable soup (Alton Brown's recipe). Thanks!

Oatmeal Raisin Cookies VI

Excellent oatmeal cookies. I think the honey adds additional sweetness and helps bind the ingredients together. These cookies did not last in our house...I will have to whip up another batch this weekend! Thanks!

Potato Leek Soup

Served with delicious yeast rolls, this soup made a great "busy day" supper. I used leftover mashed spuds in place of the instant mashed. The texture was creamy yet not too thick...perfect for a cold evening!

Buffalo Chicken Wings I

Chicken With Mushrooms

Skipped the egg bath and breading, just seasoned the breasts with salt, pepper, and garlic powder and browned in saucepan. Followed other suggestions: sauteed mushrooms first and waited until last 10 minutes of baking to add cheese. This was DELICIOUS and two out of the five kids do not like mushrooms....we didn't sprinkle any on top of those portions before adding cheese. Thanks! This one is a keeper!
