Banana Banana Bread

omg! so good! I added about 2 cups of walnuts to it! it was probably too much walnuts, but i love the nutty texture to it. probably stick to 1 1/2 cups of walnuts next time. The middle took longer to cook though. ended up baking it for 90mins total so the center would bake.

The Best Banana Bread

Great Bread. I sub white flour for some Whole Wheat flour. I noticed that it had to be cooked a little longer, but trying to figure that out without burning the rest of the loaf while the center needed to cook longer. Not sure if that was a result from using the whole wheat. I also used 3 bananas and cut the sugar in half. I also used egg beaters instead. I added a handful of chopped walnuts. Came out great!

Peanut Butter Frosting

Super easy frosting! I should of stopped at 2 cups of the sugar (it seem to be the perfect balace of sweetness) but i ended up using 3 cups of the sugar, which was still too sweet for me. I say if you like it sugary, but 3 cups, but if more peanut butter sweet tasting 2 or 2 1/4 is plenty.

Vegan Corn Muffins

I didn't have any egg replacement and just added a small can of cream of corn. it came out very moist, but still missing something. perhaps a little more salt next time. overall not bad for vegan.

Baked Macaroni and Cheese I

It was ok. i cooked the onion and garlic in the bacon grease, which may of made the mac'n'cheese too greasy. I also added a bit more cheese, that could of made it greasy also. Not as creamy as I would of liked it.

Whole Grain Waffles

Good stuff! Everyone loved it. Comes out a little denser than your typical waffles but still great and healthy. We added fresh blueberries to them!

Cathy's Banana Bread

I liked it, but wasn't the best banana bread i had. However I did forget to put the vanilla in it so I am not sure if that made a big difference. It did come out moist, but didn't rise as much as I wanted to.

Quiche Lorraine I

My first time making a quiche and boy it was FANTASTIC! I did end up leaving it in my oven for about 65-75 mins until I thought it was done. I also didn't end up using all the liquid because it would of over flowed over the crust. Other than that, EVERYONE LOVE IT!

Cinnamon Raisin Swirl Bread

Pretty good for my very first raisin bread. I used 2 1/2 tablespoon of splenda and added a little extra flour in the bread machine because it looked a little sticky. I used a lot more of the brown sugar/cinnamon, which made it ooze out, but it just made it taste better!

Yuma-licous! Tasty and so so easy! I may of put too much of the cinnamon/brown sugar in the roll, but my husband seemed to have liked it! The frosting is great!

Cinnamon Coffee Cake I

It came out a little dense and I don't think I cooked it long enough. I cooked it for 70mins. The only thing I did different was use both brown and white sugar and added a 1/4 cup of vegi oil. That could of been my novice mistake and perhaps looked as though it wasn't cooked all the way. Other than that, it wasn't too bad, even with the mistake.

Health Nut Blueberry Muffins

Overall, good recipe. I made two batches. Batch 1: I followed recipe, omitted the Oat bran b/c I couldn't find it. Great taste. The banana may of taken too much of the flavoring of the blueberries. I might omitt the bananas next time to be more of a blueberry taste. Batch 2: I used Splenda instead of the real sugar. I used soy milk instead of the butter milk. I didn't have oatbran and I added a 1/4 more of blueberries. I muffins came out more dense (probably b/c of the splenda). Still good and less sweet as the others muffins. The hubby "A-OKed" it on both. He liked the texture of the regular muffins but the less sweetness of the Splenda muffins.

Kalamata Stuffed Mushrooms

I used 1 cup of bread crumbs instead of the slices of bread. I had tomato/basil feta cheese already in the frig and used that intead of regular feta. Overall, not bad. I think the 1 cup of bread crumbs was too much because it did came out a little on the dry side. I would make it again!

Caroline's Chocolate Fudge Frosting

I followed the suggestion of only using 1/2 cup of milk. It did ended up a little runny to spread, but placing it in the frig fixed that problem. I did end up using a tad more sugar to get the right consistancy. My husband loves it...so I can't complain =)

Cajun Style Meatloaf

YUMMY! I was given permission by my hubby to make it again. I didn't have evaporated milk nor the andoullie sausage, instead i used italian sausage. I used bread crumbs and instant oatmeal. Probably add more spices and hot sauce than i should of, but it still came out yummy!
