Artichoke Spinach Lasagna

Yum. Very good. I followed some of the other reviewers and did not precook the lasagna noodles. Cooked well and moist. I did not have a jar of spaghetti sauce, so used 1 each - 14 oz can diced tomato and tomato sauce, and a small can of tomato paste with Italian seasonings. Didn't use as much rosemary. Also used a cheese blend that included jack cheese as it was what I had on hand and added sliced olives. Definite keeper.

Applesauce Bars

Quick and easy recipe. Prep/Cook time accurate. I didn't make any changes - it was good. I found it to be a very light bar. Next time I think I'll add some walnuts for a little more substance.

Colleen's Slow Cooker Jambalaya

This is a good base recipe as is or modified based on preferences or available ingredients. I used 2 cups of cooked chicken (left overs from a roasted chicken). I used 2 (14 oz) cans of diced tomatoes (one with chiles) as someone else had mentioned and then only added a dash of cayenne. I added 2x the chicken broth. I added 1.5 cups of rice when I added the shrimp (uncooked instead of cooked) and turned heat to high.

Moroccan Tagine

A new fall/winter favorite. Wonderful flavor and textures. Served over couscous. Will definitely make again. Next time I may add a little more liquid and mix the couscous in toward the end so it absorbs the flavors.

Pork and Green Chile Casserole

Liked this a lot. Added chopped black olives. Also skipped the baking step - stirred in 1/2 cup of colby-jack cheese and then sprinkled the other 1/2 on top to melt. Might have been a little better baked, but decided to keep it a 1 pot meal instead. Next time I may add some corn just to add another flavor and texture.

Mom's Coleslaw

Used a bag prepared cabbage and carrots with the dressing part of the recipe cut in half (ie 1/2 cup mayo). It came out just right mix of dressing to cabbage.

Party-Size Greek Couscous Salad

Easy recipe. Great change from traditional salads. I ended up doubling the feta, cucumber, olives, and peppers as there did not seem to be enough compared to the couscous. I took it to work and it was a hit.

Baked Brie in Puff Pastry

Great recipe. Easy and elegant. I ended up using 2 4.4oz size brie instead of the 8 oz. I added honey to the almonds for one and raspberry preserves to the other. Flavor was great for both. I used the egg wash to seal and also put in the freezer prior to baking. I ended up baking at 375.

Baked Whole Cauliflower

Easy recipe for cauliflower. Next time I will probably follow the advice of others to mix the bread crumb mixture with the cauliflower broken up and pour the melted butter/margarine over the top.

Phi Sig Chicken

Easy recipe. I did not add mustard and added red and yellow peppers in addition to the green. I added a couple of dashes of a spicy pepper blend in the last 5 minutes to give it a little more of a kick.

Quinoa and Black Beans

Good base recipe. After reading other feedback, I added a couple of more tablespoons of quinoa along with a can (15 oz) of diced tomatoes with chiles. Quick and easy recipe with items kept on hand.

Bubba's Jambalaya

Enjoyed this one. It is a good base recipe. I didn't have some of the ingredients on hand so I ended up substituting. I used a couple of TBSP of butter to saute the veggies at the start. Also used 2 14oz cans of chicken broth (no beef broth). As far as meat used, I doubled the sausage and shrimp. I also added 1/2lb of small scallops 5 minutes before adding the shrimp. As far as seasoning, I used 1 can of tomatoes with chiles and added some pepper.
