Baked Soy Lemon Chops

Reviewed: Sep. 13, 2012
Delicious, low-fat marinade that added great flavor. However I'm only giving four stars because the recipe didn't specify whether to use boneless or bone-in pork chops, and whether to cover while baking or not. I used thick-cut boneless chops and did not cover (I did remarinate during cooking as directed, and also turned them over halfway through) and cooked for 35 min. They were definitely overcooked; still tasty, but overcooked. Be aware that if you use boneless chops, reduce the baking time and keep a close eye on them. I do like the idea of another reviewer who used her slow cooker and had a very juicy result!

Fresh Southern Peach Cobbler

Reviewed: Sep. 5, 2012
I've never found a cobbler recipe I like, but after making this, my search has ended! I didn't change a thing and after eating it, I don't recommend you do either. The topping is the perfect level of not too sweet, and textures vary from crispy to chewy...yum! The peach mixture was also perfection. Serve warm with vanilla ice cream!

Spicy Grilled Chicken

Reviewed: Sep. 3, 2012
Other than substituting olive oil for vegetable oil, the only significant change I made was to double the recipe for the marinade. It didn't seem to make enough for the chicken to really get immersed in it. I did use bone-in leg quarters instead of boneless chicken breasts, and this may have been part of the problem. I also marinated overnight as I knew I would have my hands full the next day with other dishes. But, the end result was a delicious chicken that grilled up to perfection and had my guests raving! That's good enough for me!

Fresh Mozzarella Pasta Salad

Reviewed: Sep. 3, 2012
Like others, I felt this needed some beefing up to make it a tastier salad. I doubled the basil and red pepper, and added about 2 Tbsp. of balsamic vinaigrette. Also, the next time I make it, I will probably increase the fresh mozz. to 2 cups. It seemed to get lost in all the orzo. Overall, a good side dish and easy to make ahead of time!

Chinese Pepper Steak

Reviewed: Aug. 28, 2012
A very good pepper steak recipe, and so quick! I ran out of soy sauce so I did half soy sauce and half hoisin sauce, which made a nice gravy. The recipe doesn't say whether to add the gravy back into the pan after cooking the beef, but I did this and it added a lot of flavor to the veggies. Didn't have tomatoes so I added two bell peppers, plus some mushrooms I had on hand. This is a keeper!
