Chipotle Honey Roasted Peanuts

This is my go-to recipe for Christmas gifts and parties. Everyone loves them--they have just the right amount of sweetness and spice. I use mixed nuts instead of all peanuts (almonds, walnuts, pecans, peanuts).

Kung Pao Chicken

Delicious and easy to make--so much better than the take-out restaurant's version! You can vary the chili paste to your liking, and I left off the peanuts because I didn't have any. But I bet they'd add a nice crunch to this dish.

Passion Bars

OMG, these were so good! I took them along on a weekend getaway with some friends. We didn't come home with any. I kept joking that they are half way healthy, with peanut butter and oatmeal. I'll make them again.

Byrdhouse Mushroom Barley Pilaf

I love barley in any form; this is one of the nicest comfort foods I can imagine. The flavor doesn't overpower, but it's tasty; good with pork roast or pork chops.

Herbed Scalloped Potatoes and Onions

These were delicious! It's amazing what the addition of a few herbs and some mayo does for plain scalloped potatoes. Great for leftovers, too.

Spicy and Thick Turkey Chili

This is a nice variation on the turkey black bean chili I usually make. LOTS of ingredients, but it had good flavor. I cut way back on the red pepper flakes and it was still plenty spicy for us. Also used chicken broth instead of beer because I didn't have light beer.

Marrakesh Vegetable Curry

This dish had terrific flavor--it got better each day I ate it as leftovers! It's so flexible, too; I don't like raisins, so I left them out, and I used walnuts instead of almonds. Varied the veggies, too. Just the right amount of spice for us.

Satiny Chocolate Glaze

It has a good flavor, though I did make some adjustments, so I'm not sure how the original would taste. I wanted plenty of glaze, so I used 2 squares of bittersweet baking chocolate and the semi-sweet chocolate chips and increased the corn syrup a bit. The microwave worked really well for melting, at 20 - 30 second intervals. It has a beautiful satiny sheen to it and tastes great!

Quinoa with Chickpeas and Tomatoes

We had this twice in one week, it was good! My husband couldn't stop raving it about it the first time, and he begged me to make it again when we had company on the weekend. Because we prefer them, I used cannellini beans rather than garbanzo beans. The lime juice adds such a nice touch--I try to use fresh.

Big Al's K.C. Bar-B-Q Sauce

We love this sauce for its smoky flavor and thickness! I usually don't even cook it--just mix the ingredients together and brush it on meat on the grill or ribs in the oven. Lots of ingredients, but worth it!

Kung Pao Chicken

I've made this several times, and not only is it delicious, it's a very flexible recipe. Sometimes I have more or less chicken, sometimes no green onions, sometimes I make extra sauce, sometimes I don't add the peanuts. No matter what, the flavor is wonderful! No idea if it's authentic, but it's good.

Indian Cauliflower

We ate this and enjoyed it--the flavors combined well and were delicious! But next time I'd break the cauliflower into florets so that some of the cumin oil can get on more surfaces, and so that the sauce can cover more of it. Come to think of it, I'd double the sauce!

Beezie's Black Bean Soup

I love the flavor of this soup, but it's kind of fussy to get started. Soak the beans and then cook them in the crock pot--lots of steps. When I make it, I don't puree any of the soup, just serve as is. Last time I brought it to a potluck, it disappeared!

Cubanos Frijoles

It was spicy in a pleasant way, which is good, but there was no sauce to speak of. The rice and beans were kind of dry; if I make it again, I will add some tomato sauce or some of the liquid from the black beans, or some wine, or something.
