Whole Grain Waffles

Reviewed: Dec. 7, 2013
These came out beautifully! I did make some changes though...as I am fond of experimenting. I used regular whole wheat flour, left out the white flour, sugar, wheat germ, and flaxseed meal (sorta-see below). Then I subbed sunflower seed oil instead of canola oil (I think I'll use extra apple sauce instead next time), I also subbed 2 tablespoons of flaxseed meal soaked for 2 minutes in 6 tablespoons of water instead of 2 eggs, I mixed in about 1/4 cup each of whole flaxseed, Bob's Red Mill rolled oats, and wheat bran. Also, next time I think I'll use unsweetened almond milk instead of skim milk. I spread my mother-in-law's pumpkin butter on my waffles instead of syrup and it was heavenly! Love this recipe even though I changed so much of it!

Slow Cooker Scalloped Potatoes with Chicken

Reviewed: Oct. 16, 2013
I used Campbell's Broccoli Cheese Soup instead of mushroom soup to add a more cheesy flavor, especially since I did not have Cheese Whiz. I also added a bit of sour cream to add to the creaminess as well. Considered using cream cheese...may try another time. I also used shredded colby jack cheese instead of mozzarella: I thought the flavor would meld better with the broccoli cheese soup. All in all, my husband loved it (despite the overall yellow hue of the dish) and had seconds...as did I!

Easy Southern Biscuits

Reviewed: Jul. 27, 2013
I'm only giving it 3 stars because I used Olive Oil Mayo and 2% milk...so my biscuits came out pretty, but were not fluffy, they were sorta flat. Still, they were tasty and made even tastier with sausage gravy; although not the usual type of biscuits you put with gravy. Used my Silpat mat to bake them on, so they came out beautifully golden on their bottoms without the use of Pam or whatever. Next time I'll either just make regular ol' biscuits or get the ingredients the recipe actually calls for:-/

Great Grandma's Peach Cobbler

Reviewed: Jun. 17, 2013
I used fresh peaches that were getting a little too soft, sprinkled some ground cloves on top, and since I didn't have peach "juices" I added just enough butterschnapps to the peaches. Also, I used 3/4 cup of white sugar and 1/4 cup brown sugar for the crust. (I wanted to use the rest of my brown sugar up.) I'm certain this recipe would have been wonderful without my alterations...but it seems I just can't help myself! Next time, I'll try pears, cloves, and brandy...

Delicious Ham and Potato Soup

Reviewed: Sep. 1, 2012
This soup is lovely! I used both black and white pepper and about 1 tsp of dried chives. I also blended it for a few seconds to make it less chunky but not completely smooth. Worked like a gem to break up the large bits of leftover ham.

Butterscotch Pumpkin Pudding Cake

Reviewed: Aug. 25, 2012
I made a cream cheese glaze to go with this cake. The cake is SUPER moist and will be perfect for a cool fall day! It did take almost 2 hours to cook thoroughly however.
