Whole Grain Waffles
These came out beautifully! I did make some changes I am fond of experimenting. I used regular whole wheat flour, left out the white flour, sugar, wheat germ, and flaxseed meal (sorta-see below). Then I subbed sunflower seed oil instead of canola oil (I think I'll use extra apple sauce instead next time), I also subbed 2 tablespoons of flaxseed meal soaked for 2 minutes in 6 tablespoons of water instead of 2 eggs, I mixed in about 1/4 cup each of whole flaxseed, Bob's Red Mill rolled oats, and wheat bran. Also, next time I think I'll use unsweetened almond milk instead of skim milk. I spread my mother-in-law's pumpkin butter on my waffles instead of syrup and it was heavenly! Love this recipe even though I changed so much of it!

Slow Cooker Scalloped Potatoes with Chicken
I used Campbell's Broccoli Cheese Soup instead of mushroom soup to add a more cheesy flavor, especially since I did not have Cheese Whiz. I also added a bit of sour cream to add to the creaminess as well. Considered using cream cheese...may try another time. I also used shredded colby jack cheese instead of mozzarella: I thought the flavor would meld better with the broccoli cheese soup. All in all, my husband loved it (despite the overall yellow hue of the dish) and had did I!

Easy Southern Biscuits
I'm only giving it 3 stars because I used Olive Oil Mayo and 2% my biscuits came out pretty, but were not fluffy, they were sorta flat. Still, they were tasty and made even tastier with sausage gravy; although not the usual type of biscuits you put with gravy. Used my Silpat mat to bake them on, so they came out beautifully golden on their bottoms without the use of Pam or whatever. Next time I'll either just make regular ol' biscuits or get the ingredients the recipe actually calls for:-/
