Apple Cake in a Jar

These were fun to make...had to put the baby down for a nap and clear the counters to start. I boiled my jars and greased them with butter flavor crisco. Shredded enough granny smith apples to make 3 cups (drained of juice) and mixed all in my stand mixer...Instead of 2/3 cup water I used the juice and enough water to make 2/3 cup...filled 8 jars with 1 cup of batter and baked on a cookie sheet. Just before they were done I threw the lids and rings in boiling water to sterilize and they sealed wonderfully. I couldn't wait until morning to taste so I opened one while it was still warm and thought it tasted very yummy...Can't wait to see what everyone else thinks...Thanks for this recipe, I will definitely make again.

Pain au Chocolat (Chocolate-Filled Croissant)

These turned out to be my Saturday baking project... I didn't feel like dusting off my bread machine so I just used my KitchenAid with good results. When you start to read this recipe you will find it necessary to add more liquid to the batter, I added about 1/2 cup more, and used all semi sweet choc chips that I chopped up a bit. Also there is no need to pinch the ends closed. They look prettier if left open... We loved these flaky, crispy, buttery, chocolaty petit pain au chocolat and served with steaming cafe au lait!

Delectable Marinated Chicken

Really good flavor...I usually avoid liquid smoke but added a splash out of respect for the author of this recipe and was pleasantly surprised. Served with a fresh romaine salad I topped with grilled red pepper and Bills Blue Cheese Dressing..so good.

Belle's Hamburger Buns

Nice texture and very forgiving...My 3yo and I made these to hold bbq filling this weekend and everyone loved them. I used the exact ingredients, but mixed them up as we usually do. I let my daughter roll and pat the dough until they were almost flat..but they still rose beautifully. I did end up tossing on some minced onion and poppy seeds which gave "Tay-Tay's buns" some extra flavor...Thanks Belle!

Tuna Lime Tostadas

..A deep sea fishing trip resulted in a freezer full of tuna steaks..One particular recipe I chose left me with a few marinated and grilled tuna steaks which I used to make these tuna lime tostadas/tacos. I just cut the steaks into bite size pieces, used flour tortillas and pico de gallo rather than the corn tostadas and salsa. I also added a diced avocado..Served with drunken fruit slushies...No complaints!

Fiesta Stuffed Peppers

...I used leftover taco meat and brown rice. Just mixed with a handful of grated cheddar and a little salsa (forgot the egg). Prepared 2 green peppers by cutting from top to bottom...removed the seeds, boiled for 3 mins and drained...Once stuffed I spooned a little extra salsa on top, covered with foil and baked for 30 mins...topped with more grated cheddar and back into the oven until melted. VERY flavorful! I served with corn on the cob (just threw them in the same pot of water I cooked my peppers in) and tortilla chips. Great way to use up that leftover taco meat..Thanks Lisa M for a great dinner idea.

Vegetable Beef Soup II

...File this one under "leftovers" because it is the perfect recipe for leftover steak.. I had 2 grilled sirloin steaks that had marinated in steak seasoning and cooked rare...cut them into small dice and added to the onion and garlic I had sauteed in butter. I pureed the tomatoes and added 4 cups of beef stock (Tone's Beef Base) instead of the 5 cups of water. I also used 2 cups of frozen mixed veggies (peas, corn, gr beans and carrots) since I needed my fresh veggies for a crudites..added a good size pinch of br sugar and after simmering for 45 mins I ended up with a really flavorful soup. Had this for lunch with french bread and salad.. I also ended up with enough to give to my neighbor who could tell I was cooking and happened to stop by...Thanks Priscilla!

Mocha au Lait Mix

This is very easy and uses ingredients I always have on hand...After tasting I decided to add a little more instant coffee and mix all in the blender until powdery...When I was ready for a cup I put 1c boiling water to 3 heaping teaspoons of mix and blended until frothy!!!Love this recipe!!!Thx Amy Beth!!!

Strawberry Lemon Muffins

...Kids loved these muffins. I had a little over a cup of diced strawberries and sprinkled them with sugar to sweeten them up a bit and I also made a lemon glaze that I spooned on top once out of the oven. I thought they tasted better the next day after sitting in the fridge for a while...These tart little muffins are excellent with a tall glass of milk or hot cup of coffee...thanks for sharing such a nice recipe!

...I was so glad to find this recipe! My girlfriend and I used to dine at a restaurant in Scottsdale that served lavosh. They would top it with lots of melted cheese, green chilies, diced tomatoes and avocado...so good! I am freezing half the dough (divided) and am hopeful it with thaw and bake up just as good when needed. Thanks Sally..this recipe will save me lots of ca$h :)

Berry Cheesecake Muffins

I saw these in the Feb/Mar 2006 Taste of Home Magazines judges top pick..I agree. I used frozen berries, patted dry before adding to the cream cheese mixture and they worked fine. Not too sweet and keeps well in the fridge for a day or two. Next time I will use 8oz of cream cheese to bump up that flavor and try different berries too.

...Hubs is from Lincoln and when the HUSKERS take to the field he wants Runza's...This is identical to my runza recipe except for the addition of onion soup mix...nice. Made these with my own bread dough and ended up with more dough than filling. Next time I will use at least 1 1/2 lbs of meat and adj the other ingredients accordingly. My new runza recipe!! Spring Biscotti

..good biscotti recipe. I usually bake chocolate walnut so this was a nice change of pace.. I LOVED the aroma of the orange zest that was evident when whipping up the butter and sugar so I had to add more. The only advice I have is to be sure to chop the pistachios and cranberries and don't forget to refrigerate the dough. As others stated the dough was sticky but I was able to shape it by spooning it onto the parchment and wetting my fingers to shape..Didn't crack or crumble when cutting. Also be sure to watch the final bake as 15 mins would have been too long for my oven. Topped mine with a drizzle of white chocolate. Very pretty.

Jet Swirl Pizza Appetizers

..These are great after school snacks...really quick and easy! I have started adding a little of my pizza sauce before layering the meat and cheese, then bake until crispy brown on the outside. I usually don't slice them right away. Just let it cool, wrap and refrigerate until needed (I do my baking in the morning so this method works well for me). When the kids get home from school I just slice, put them back on the cookie sheet and broil until crispy good..Thanks Julie :)

Savory Party Bread

I have prepared this Savory Party Bread twice now..took to a bbq and it was gone before I could snag a bite. The second time it replaced our popcorn during a lazy afternoon of video's. We LOVE this recipe and any leftovers you may have are easily reheated in the foil...thank you Kay!

Killer Cheesecake

I made this for my sons 13th birthday party...followed the recipe exactly as written and was impressed with how creamy and flavorful this cheesecake turned out to be. The sour cream topping was a nice addition and looked like frosting. I topped each piece of cake with a chocolate covered strawberry...a big hit with all. Thanks Austntachs!!

Guacamole

...Avocados were four for a dollar at the farmers market so I had to make guacamole! We loved this recipe..The only change I made was used key lime juice (fresh limes were floating in our Corona's) and I added a little salsa. I mashed my avocados with my potato masher and diced my tomatoes and onion very small...Do not leave Out the Cilantro...So good! Can't tell you if this is good the next day..didn't last that long...Thanks for a great recipe!

Zesty Rice 'N' Bean Casserole

Not bad.. I prepared a big fat chicken for the grill and had some time to make another side dish. Used yellow pepper and added a pat of butter as the veggies were sauteing. Scaled this to 4 servings and had to add more liquid at the end. Family liked this better than I did...think I will add some of that grilled chicken and a little cheddar to the leftovers and make burritos for lunch :) Thanks Daphne.

Campfire Roasted Potatoes

...Could not make ANOTHER baked potato in the micro or mashed potato on the stove (can't wait for it to cool down so I can use my oven again!) so decided to try these. They were ok..next time I will add more seasoning and fresh garlic. Also turned out a little dry so will add a splash of evoo as well...
