Chicken Pot Pie IX

Loved this recipe too!! I used left over roasted chicken breast and au gratin potatoes (diced)!!...so good. Instead of the sliced carrots and green peas I used 2 cups of frozen mixed veggies (simmered in chicken broth)..also omitted onion since there was plenty of onion flavor in my potatoes...added about half a cup of left over cheese sauce I had from the potatoes and a little more milk to the liquid mixure..used a 10 inch pie plate and a very flakey pie crust..brushed egg white on the bottom and top crusts..."yum-o"..next time I have left over chicken will make this one again!! Mocha au Lait Mix

This is very easy and uses ingredients I always have on hand...After tasting I decided to add a little more instant coffee and mix all in the blender until powdery...When I was ready for a cup I put 1c boiling water to 3 heaping teaspoons of mix and blended until frothy!!!Love this recipe!!!Thx Amy Beth!!!

Apple Enchilada Dessert

These were good!!My 12 yr old loved them and asked me to make for his birthday.. I followed recipe exactly except used my own apple pie filling and topped with homemade Vanilla ice cream. This is a keeper...

Baked Ziti I

This was pretty good..Makes a lot!!! I made as instructed (used my own sauce) and put half in the freezer for another day...Looking forward to make a salad , bake a loaf of french bread and pull this from the freezer for a quick and EASY meal...Thx!!

Emily's Famous Hash Browns

...Just made these hash browns..my 12 yr old said too much onion, which I agree..next time will reduce onion by at least half. Also, cooked these in bacon grease since I had just fried some, and used a cast iron skillet on med heat for aprox 3 mins on each side. Med-hi heat would have been too much. I made 4 sm hash browns rather than 1 lg and added garlic salt and parsley to the salt and pepper for seasoning... Other than the few things I mentioned these were good and will probably make again.

Caramel Snack Mix

I love these snacks that use breakfast cereal as a main ingredient...I don't mind feeding it to my 2 yr old... This Caramel Snack Mix is really good. I used rice chexs, chopped pecans and chopped almonds that I roasted...perfect mid morning or afternoon snack.

Brunch on the Bayou

..I don't get it! Mine turned out really bad..:( I used bacon rather than italian sausage and did not have any white wine on hand. The bread made it a little tough and the addition of sour cream and parmesan at the end did not help. The kids did not care for it at all. I'm not sure what I did wrong...

Southwestern Egg Rolls

Made these to serve as a snack for poker night. I doubled the recipe and served w/ salsa and sour cream. They turned out really good..not as spicy as I thought they would be but had a really good flavor. Next time I am going to use egg roll wrappers for smaller portions.

Caramel Apple Dip

This is really good caramel dip!! Kids and adults loved it..I mixed a bit with some creamy peanut butter and slathered it on graham crackers....so good. I think you could use this between cake layers and as frosting!! Very quick and easy...

Baked Macaroni and Cheese I

I made this to see if my 23 mo old would like it...I didn't have any bacon on hand and I used baby shells rather than penne pasta. I used only half an onion and minced before sauteing with the garlic...This was a little too dry for our taste and had too much onion flavor. I think next time I will reduce the onion and add sour cream or cream cheese to the sauce...will probably add a pinch of cayenne too.

Fish Tacos

These are THE BEST fish tacos I have had since vacationing in Oceanside... The sauce is REALLY good and the batter was perfect. It was a little spicy for the kids so I will use only 1/2 tsp cayenne pepper next time. The only change I made was used fresh lemon juice instead of lime (didn't have on hand) and omitted the jalapeno pepper..I used a lb of talapia and fried in my cast iron skillet. To avoid the fish fry smell in my house I had my husband fry on the grill burner outside...I also served with homemade pico de gallo...Sooooo good!!!

Easy Morning Glory Muffins

Just made these muffins..I used 24 cupcake liners and baked for 20 mins..Came out very moist but a little too oily for me. Will use 1/2 applesauce next time. They remind me of carrot cake too..very delish'... and my 20 mo old loves them too...will freeze 1/2 of these for another day..:)

Tomato Spinach and Basil Soup

I made this soup for my vegetarian daughter to take home and keep in the fridge for a quick meal...I also cooked the onions and garlic for 5 mins and used 2 cans of italian diced tomatoes + 1 Tbls of tomato paste. After it cooled a bit I pureed in the blender for better consistency. I love the flavor and will suggest she serve with grilled cheese sandwiches!!

Hot Bean Dip

Used a whole pkg of taco seasoning and added a can of diced green chilies...still needed somthing. Has a very creamy texture..think it would have been more interesting with ground sirloin or diced tomatoes added...still looking for a tastier hot bean dip.

Ham Roulette

.....I made these as an after school snack for my 12 yr old and he did not care for them at all...I unrolled and made sandwiches so the ingredients would not go to waste...I think the problem was the cream cheese and mustard combination was strange (tasted like butter)and needed garlic salt or something...:(

Cold Green Bean Salad

Made this salad to serve w/Tomato Chicken Parmesan...I only used 1/2 of the onion and refrigerated while my entree cooked in the oven...My husband and 14 mo old went back for seconds..will make again.

Tomato Chicken Parmesan

Pretty good recipe..I used 6 chicken thighs and coated w/ seasoned flour before dipping in 1 egg and bread crumb/cheese mixture.. I made my own seasoned bread crumbs and pasta sauce so was able to season to our liking and topped w/ mozzarella...I served w/ buttered fettuccine, Cold Green Bean Salad and garlic toast...will probably make again.

Bread Machine Bagels

This was the first bagel recipe I have attempted and they turned out really good...They're small and perfect for snacking. I think next time I will try to double the recipe and let them rise a little longer....

Can't Get Enough Caramel Cookies!

Easy recipe..simple ingredients..no flour or eggs and has an old fashioned good flavor. Exactly what I was looking for when I came across this recipe...My only suggestion is to reduce the amount of salt suggested..will make these again.
