Russian Mushroom and Potato Soup

I have been eyeing this one for a while...I didn't have leeks so used sauteed onion instead and also threw in some celery. I just mashed some of the potatoes instead of thickening with flour (my potatoes were done in less than 20 mins) and added some fresh garlic to the mushrooms as they were sauteing. Served with a salad and slice of french bread for a nice quick lunch...thanks.

Cheesy Bacon Muffins

These were pretty good..a little bland, so I ended up drizzling some pure maple syrup on top when they were still warm from the oven. Nice way to say good morning to the kids...thanks.

Baked Penne with Italian Sausage

Loved this sauce! I needed to use up some fresh pasta and found this recipe in my search for a quick and easy dish I could put together in less than an hour. I used bulk mild Italian sausage and deglazed the pan with Lambrusco...really good! I only used half of the sauce on pasta and made french bread pizza with the rest the next day..yum!

Grilled Rock Lobster Tails

...We love lobster! I've never had the nerve to bring home a live one...so decided to give these a try. They were actually very easy to prepare. We just split them down the back, brushed on the marinade and grilled them right side up for a few minutes while continuing to baste. Just kept turning until they looked done. Ours took a little longer to cook and they came right out of the shell. Even with all the basting, we still dunked ours in butter...so good!

Grilled Marinated Shrimp

...Another great recipe Robbie! Nice and spicy! I used italian flat leaf parsley and ketchup instead of the tomato paste. So good right off the grill...will be mixing up this marinade for many years to come...thanks!

Easy Creamy Chicken Mushroom Sauce

...For us, the sauce is just tooooo thick! Had to add some chicken stock at the end to get the right consistency. Used a few grinds of pepper and a dash of paprika and served over egg noodles...Was easy but the end result was not to our liking.

Garden Veggie Pizza Squares

...Crunchy..tasty..good! Used pizza dough and the whole pkt of Ranch. I also added diced celery and more red pepper to the topping. You will need to cut the veggies small and press them into the cream cheese or you will end up having to clean more than just your cutting board...Thanks Meghan for another inventive way to get fresh veggies on my buffet table!

Jet Swirl Pizza Appetizers

..These are great after school snacks...really quick and easy! I have started adding a little of my pizza sauce before layering the meat and cheese, then bake until crispy brown on the outside. I usually don't slice them right away. Just let it cool, wrap and refrigerate until needed (I do my baking in the morning so this method works well for me). When the kids get home from school I just slice, put them back on the cookie sheet and broil until crispy good..Thanks Julie :)

Fiesta Stuffed Peppers

...I used leftover taco meat and brown rice. Just mixed with a handful of grated cheddar and a little salsa (forgot the egg). Prepared 2 green peppers by cutting from top to bottom...removed the seeds, boiled for 3 mins and drained...Once stuffed I spooned a little extra salsa on top, covered with foil and baked for 30 mins...topped with more grated cheddar and back into the oven until melted. VERY flavorful! I served with corn on the cob (just threw them in the same pot of water I cooked my peppers in) and tortilla chips. Great way to use up that leftover taco meat..Thanks Lisa M for a great dinner idea.

Christmas Gift Loaf

...Made this bread to add to my sweets platter. Omitted the nuts, used mini chips and topped with penuche icing..kept really well in the fridge until it was time to slice and serve. The guys at the shop really liked this one. Making another loaf for a party we will be attending...Thanks ABNER100!

Egg Salad I

..This IS good egg salad!! After reading RedRobynNAU (GO LUMBERJACKS!) review I had to try it...I have always made my egg salad with LOTS of mayo and sweet pickle relish. The only thing I did different was sub Morton Nature's Seasons (Can't eat a tomato with out it) for the salt and chased with a few peperoncini...good stuff.

Pumpkin Cookies with Penuche Frosting

Years ago I worked in a little shop that made Penuche fudge and so that is why I picked these particular pumpkin cookies..I didn't like them right out of the oven...too cakey...But after I drizzled on the frosting and let them sit a while in the fridge they were perfect! I did end up adding more spice's and left out the nuts (hubby doesn't like them)..We have family visiting from out of town and they passed up my caramel apples and gobbled up these! Great recipe Suzanne!

French Toast Fingers

...This was exactly what I was looking for this morning..Didn't have enough milk for oatmeal so I had to come up with something quick. We LOVED these little french toast fingers! I didn't even bother cutting off the crust and used Wonder bread and smuckers strawberry preserves. They reminded us of a jelly donut. Think I will experiment with the filling and try cream cheese...peanut butter...nutella...just be careful not to overfill...Thank You Mavis!!

Guacamole

...Avocados were four for a dollar at the farmers market so I had to make guacamole! We loved this recipe..The only change I made was used key lime juice (fresh limes were floating in our Corona's) and I added a little salsa. I mashed my avocados with my potato masher and diced my tomatoes and onion very small...Do not leave Out the Cilantro...So good! Can't tell you if this is good the next day..didn't last that long...Thanks for a great recipe!

Spanish Potato Omelet

...I love the potato omelet this produces..Used leftover baked potatoes and they fried up beautifully. Since they were already cooked I browned them in butter rather than evoo...whipped up the eggs with aprox 3 Tbls of water and rather than a diced tomato and gr onion garnish I topped with shredded cheddar and picante sauce..REALLY GOOD!..especially with a cold glass of fresh O.J...:)

Chicken Enchiladas II

...This is a good recipe to use during the week for leftover chicken...Quick fix and filling if you double the recipe. I roasted 2 chickens Sunday and used the dark meat of 1 for these enchiladas...My family prefers my standard recipe as these were very mild. Was good served with spanish rice and my spicy guac with chips and salsa... Thanks.

Chocolate Cornstarch Pudding

...Great pudding recipe! We celebrated my husbands birthday and he requested a yellow cake with chocolate pudding...no icing...no nuts...no sprinkles or candles....NO FUN! I baked the yellow cake in a 13x9 dish and while it was cooling made this pudding. The only changes I made was added 2 big pinches of brown sugar and a handful of mini choc chips. I poked holes in the cake and poured on the pudding. Turned out to be really good and best of all hubby said it was exactly what he wanted. Will be using this recipe from now on... :)

Strawberry Lemon Muffins

...Kids loved these muffins. I had a little over a cup of diced strawberries and sprinkled them with sugar to sweeten them up a bit and I also made a lemon glaze that I spooned on top once out of the oven. I thought they tasted better the next day after sitting in the fridge for a while...These tart little muffins are excellent with a tall glass of milk or hot cup of coffee...thanks for sharing such a nice recipe!

...Hubs is from Lincoln and when the HUSKERS take to the field he wants Runza's...This is identical to my runza recipe except for the addition of onion soup mix...nice. Made these with my own bread dough and ended up with more dough than filling. Next time I will use at least 1 1/2 lbs of meat and adj the other ingredients accordingly. My new runza recipe!! Thanks Marlene!!

Spiced Applesauce Bread

..Really like this recipe. I made this over the weekend for company and just kept it in the fridge to snack on. Perfect with strawberry butter OR cream cheese with chopped pecans...The only change I made was used br sugar, homemade applesauce and rounded all the spices...Thanks Louise!
