Ellen's Chicken Cacciatore

Reviewed: Jun. 19, 2014
This was really good!! I didn't have any orange juice or white wine, so just made it without and it was still delish! I used herbs de provence as that is what I had on-hand. I'll make this again.

Cowgirl Stew

Reviewed: Apr. 5, 2014
This was just great! I used cannellini beans and put a bag of mixed frozen veggies in (corn, green beans, peas). It makes a ton, so I froze the rest. It is a very versatile stew, so I can imagine you can use whatever veggies you have on hand. I'm sure it would be good with ground turkey too.

Bourbon Whiskey BBQ Sauce

Reviewed: Mar. 5, 2014
This is, by far, the best BBQ sauce I have ever had! I will never buy store-bought again. The recipe as written makes enough for about 3 separate BBQ dinners. I made 2 racks of ribs last week with it, made BBQ chicken with it this week and will use the rest on pork very soon. I'm telling you, it's so good, you will stand over the pot and eat it by the spoonful.

Baked Teriyaki Chicken

Reviewed: Jan. 23, 2014
I made this last night and my husband's was moaning and groaning (in a good way!) while eating it. This one is a winner and I didn't change a thing. Perfect recipe as written!

Burgundy Roast Beef

Reviewed: Jan. 13, 2014
This was really delicious and easy! I used a Merlot wine and 2 containers of fresh mushrooms. About an hour before I thought the roast would be done, I put in some cut up potatoes. I also sprinkled everything with some garlic powder, thyme and pepper to give it some extra flavor. This makes such a great sauce! This recipe is a keeper!

Baked Pork Chops I

Reviewed: Nov. 5, 2013
These pork chops were fabulous! The flavor of the sauce was to die for. I used a roasted garlic cream of mushroom and I will use that every time I make this. The whole family loved these! Thanks for a great - and easy - recipe!

Baked Apricot Chicken

Reviewed: Oct. 16, 2013
This was ok, but the sauce was watery and not thick like I imagined it would be. Not sure I'll make this one again.

Chef John's Sausage & Shrimp Jambalaya

Reviewed: Sep. 23, 2013
I liked this, but will probably not make it again. I put the brown rice in and mine took 2 hours to cook. If I do make this again, I will cook the rice separately and then add it to the dish. It's also possible you have to add the rice, bring the pot to a boil and then turn to low. I used brown rice, as the receipe stated, so not sure why it didn't work out for me. This dish is pretty spicy as written, so take that into account if you are dealing with eaters who can't handle a lot of heat.

Marinated Tuna Steak

Reviewed: Aug. 21, 2013
This was terrific and full of flavor! I let it it soak in the marinade for a little over an hour. I'll definitely make this one again!

Beef Stew VI

Reviewed: Jan. 28, 2013
This was really delicious! I added 1/2 cup of red wine and it gave it such an incredible flavor. My potatoes weren't done after one hour, so I popped my dutch oven in the oven to finish it off. I think next time I will put the potatoes in for the whole 2 hours, or put them in much earlier.

Juicy Roasted Chicken

Reviewed: Jan. 25, 2013
This is one of those recipes that uses few ingredients, but will knock you off your feet. The whole family loved this and will make this again and again! I used real butter, not margarine. Next time I'll add some garlic powder too. Simple and amazingly delicious! Thanks for a great recipe!

Caramelized Baked Chicken

Reviewed: Jan. 9, 2013
Pretty good. I followed the first reviewers advice to make the sauce thicker. It was still not very thick, but pretty good. I may make again, but not one of my favorites.

Blackened Salmon Fillets

Reviewed: Jan. 4, 2013
This was delish! It is VERY spicy, so if you don't like a lot of spice, scale down on the cayenne. I'll make this one again and again. Thanks for a great salmon recipe!

Gourmet Mushroom Risotto

Reviewed: Jan. 4, 2013
This is some amazing stuff!! I've made this several times and have found you can use whatever kind of mushrooms you want. I used dried chives instead of fresh. I've also found I like it best when I put some chopped garlic in it too. This always takes me longer to make than the time stated - the stirring takes a long time, but it is oh so worth it!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Dec. 23, 2012
This is my new favorite chocolate chip recipe! We were all freaking out over how good these cookies are. I made exactly as written and used a 1/4 cup scoop to mold the cookies. This made me 13 huge cookies...I mean these cookies are as big as a babies head! Not a bad thing, but made giant cookies. I made them for Christmas Eve, which is in 2 days and not sure they will last that long. I'm going to make another batch today and will try to make them smaller. Thank you for this - this recipe is as good, if not better than any bakery chocolate chip cookie I have ever tried (and I've tried a lot)!

Sweet Bacon Wrapped Pork Loin

Reviewed: Dec. 9, 2012
This was delicious! Only changes I made...I doubled the sauce and added a splash of red wine. I marinated for about 4 hours. I seared in my dutch oven, removed the pork, deglazed with the marinade, put the pork back in and scooped sauce over top of it. I cooked with the lid on the dutch oven for 1 hour. That's how long it took for mine to be done. Was very good! Thanks for a great recipe! SAFETY TIP: Count the toothpicks you put in because when it's done they are kind of hidden!

Salmon Cakes II

Reviewed: Dec. 8, 2012
These were really good, but I think just a couple of adjustments made it an absolute hit! I used fresh salmon, not canned. I used 10 ritz crackers in place of breadcrumbs. I put parmesean cheese on top. And the absolute must was the sauce another reviewer recommended....2 tablespoons of mayo and 1 tablespoon of dijon mustard, chilled. I think that simple dipping sauce knocked it out of the park! This one is a keeper.

Sausage, Peppers, Onions, and Potato Bake

Reviewed: Nov. 20, 2012
We LOVED this recipe! The flavors from the wine and chicken broth are amazing. I didn't change anything - except, I only had 1.5 lbs of sausage, so that is all I used. I didn't change anything else. I used sweet italian sausage. Next time I will try a mix of hot and sweet. Thanks for a great recipe!

Orange Cornish Hen for Two

Reviewed: Nov. 16, 2012
This was delicious! I made as is, except I made 2 hens, so doubled everything. I also cooked about 10 minutes more than stated since I had 2 hens and it was perfect. Thanks for a yummy and easy recipe!

Ellen's Buffalo Meatloaf

Reviewed: Nov. 15, 2012
This was really good! The only change I made was to use panko breadcrumbs instead of a piece of bread. Mine didn't cut into slices like a regular meatloaf, it kind of all crumbled up. To be honest, it looked like dog food on the plate, but it was yummy, and 3 of us ate the whole loaf!
