Simple Spinach Lasagna

I love this recipe. Easy and fun to make. I think cottage cheese is a great substitute for ricotta as it gives it the same texture with less fat. Hearty and delicious!

Tofu Fudge Mocha Bars

This was so much fun to make and deeelicious. I gave it 4 stars b/c I think that it could've called for less sugar (2 cups) and less coffee. Other than that, they came out moist and yummy. Texture is not as cakey as a brownie but good enough to pass for the real thing. Thank you!!!!

Smoked Salmon Sushi Roll

I never would've dreamed making sushi..it seems so mysterious and sophisticated. But after reading rave reviews, I jumped right in and was very happy with the outcome. Initially, I thought that 6 tsp of rice vinegar was too much, but after the rice cooled it was perfect. Next time I will add sesame seeds to add a little flavor. What makes it even better, is having miso soup and green tea..yummy!

Ezekiel Bread II

This was my first time baking bread and this recipe would've been great if the bread had risen:) Make sure your yeast is good. I found out that my yeast was no good. Had I done research on bread baking tips, I would've noticed that the yeast didn't "activate". My advice is to buy enough yeast to test out..if it doesn't bubble or foam, it's no good and to cut this recipe so that you won't waste product. I had to throw it all away, however I will try again and hopefully get it right next time.

Vietnamese Rice-Noodle Salad

This was really good. I tweeked it with more fish sauce, sugar and topped it off with fried tofu. To save time I used a food processor for the sauce. I will definitely use this again. Thanks!

Raspberry Cup Cakes

This recipe was delicious and very easy. I didn't have rasberries, so I made it plain and topped them with store bought strawberries and the its' syrup. My only complaint is that they don't travel well at all. My only suggestion is to either not go far with them or serve them right out of the freezer as they will melt. Overall, everyone loved them.

Mrs. Fields Cookie Recipe II

If you bake these cookies without expecting them to be the 'real' thing, you may not be disappointed. Be careful not to overbake as warned. They will not look ready but trust that they are or else they won't be chewy. Overall, this recipe was definitely worth the time. Thanks!

Vegetarian Chickpea Sandwich Filling

I tried it without the mayo and it was still delicious. I put more lemon juice and added two cloves of garlic. Next time, I will add a soy based mayo to give it a better consistency. Overall, a great and easy recipe!

Banana Wheat Bread

This was great. I substituted the nuts for chocolate chips and the wheat germ with rolled oats. I used 31/2 bananas and made muffins. I was surprised to find out how delicious they were with wheat flour. I will definitely use this recipe again.
