Chicken Pasta Salad II
I followed the recipe pretty closely and think it's delicious. My only feedback would be there is a bit more dressing than I like, but next time I will add more veggies or pasta to compensate. I never thought to add fresh mushrooms or corn to a pasta salad before, but both were great additions! Since I like mushrooms, next time I will add more than the recipe suggests. Like some other reviewers, I substituted red pepper for green pepper since we like the taste better. I like green olives, but not all of my family members do, so I used a little less than called for. It was enough to give me the flavor, and they can pick them out if they want to.

Classic Macaroni Salad
Fantastic when made with only 1/8 - 1/4 c of sugar! The whole family loved it and it reminded me of macaroni salads of my youth. The dressing is perfect in taste and was just the right amount for the amount of pasta. I made it 6hrs ahead of being served so the dressing had absorbed into the pasta, which is just the way we like it. My family doesn't like salads that are very saucy or have too much dressing. The only variations I made from the original recipe was reduce the sugar to less than 1/4 c and a little more than 1/8c. I also didn't have any macaroni noodles on hand so I used multicolored rotini spirals. I wasn't sure they would work okay with this kind of a dressing since I normally use Italian dressing with those, but it turned out fantastic. I really liked the shredded carrots in the salad. I have never thought to add them to a cold salad, but they really worked well. I think this salad would work well with other additions like some thawed frozen green peas.

Pressure Cooker Chili
Disappointed with how watery it was. The only changes I had made to it was using red pepper instead of green sweet pepper and a green cayenne pepper instead of the jalapeno. When I opened up the pressure cooker it looked like chili soup. I think 2c of liquid is too much when cooked in a pressure cooker since so little liquid cooks out of it. The taste was good, but I agree that it needs a little something... maybe a hint of chipotle or something.
