Delicious Egg Salad for Sandwiches

Made this the other day and I have to admit that it needed a few adjustments. First, the egg boiling method threw me for a bit of a loop but I tried it anyway. Eggs came out okay but the yoke was much darker yellow than I had expected. They seemed firm enough but maybe I needed to let them cook a bit longer. Ended up letting the whole thing sit for a day and it did fine, but when tasted the whole thing seemed rather bland. Ended up adding some salt (which improved the taste even though I added a little too much) and still needed something. Remembered that my mom used to put relish in her egg salad and that was what I was missing. Didn't have any on hand so made due with chopping up some dill pickle slices and it was better. Going to make it again (with proper ingredients on hand) and will probably let the eggs boil for a couple of minutes before taking them off the stove.
