Avocado Mango Salsa
Everyone I have made this for loves it. I do use jalapeno instead of habanero but that is just personal preference. I serve it on grilled tilapia with mango salsa(I bake it)also from this site. I prefer this mango salsa to the one with the tilapia recipe. We are having this for dinner tonight for several reasons. 1. I found ripe mangos at the store yesterday. 3. Great way to do Friday fish. 3. This salsa and the tilapia taste like spring to me and with -11 degrees this morning I really need to feel like spring. SO delicious, can't wait for dinner!

Crispy Rosemary Chicken and Fries
This is absolutely delicious! For reviewers who commented that it isn't crispy, I am guessing that you aren't opting to baste in the last 15-20 minutes. I basted 3 times and if makes a huge difference. Served this with a kale, apple, pecan and feta salad.

Slow Cooker Red Curry Beef Pot Roast
I love this dish!!! I did make it more like a Thai coconut milk curry soup which we love. I make a green chicken coconut curry soup so I loved finding half this red curry paste with beef recipe. I used about 1.75-2 pounds of beef (more soup consistency), sweet potatoes instead white potatoes, and kale instead of bok choy. The potato and greens changes were mostly personal taste reasons but I believe were delicious changes. If you like sweet, creamy dishes with a serious kick you really need to try this dish. It's a new dish in our recipe rotation. Yum!
