I wanted Lemon Bars so bad.
I dreamed of them, felt the tart and sweet flavor on my tongue, drooling with anticipation. I have eaten lemon bars before, but I have never made them...I'm a beginning baker, and as much as I would love to get better, my waistline does not.
I followed the recipe below to the letter. As I took them out of the oven, I noticed they didn't look quite right, but I waited eagerly as they chilled in the fridge. Finally, after many hours I took them out, knife in hand ready to cut off a slice of
But it wasn't meant to be.
Sadly, somewhere along the way, something terrible had happened. First, the topping was a very thin custard consistency that sat on top of a rock hard "shortbread-esque" crust...which I could not for the life of me cut through. When I finally managed to
dig out a piece to bite in...oh my yuck. The lemon flavor was terrible...it tasted like a Country Time Lemonade with the consistency of snot. The crust tasted of flour...and nothing else.
So, when you follow a recipe exactly, what do you do when it all goes wrong? I'm assuming it is not the fault of the recipe, I got it from a trusted source who is a very good baker. I think I did something wrong in the combining of all those ingredients
to make the world's worst lemon bars. You be the judge, let's CSI this stuff and get to the bottom of this gruesome crime:
MIL's Lemon Bars
1 1/2 c flour + 3 tbsp
1/2 c confectioner's sugar
3/4 c butter
1 1/2 c white sugar
1 tsp. baking powder
1/2 c lemon juice
Preheat the oven to 350 degrees. Combine the flour, confectioner's sugar, then cut in butter. Press into lightly greased 9x13 pan. Bake for 15 minutes, remove and let cool. Meanwhile, combine eggs, sugar, juice, 3 tbsp flour, and baking powder. Pour over
crust, bake for 20-25 minutes. Chill before serving.
I followed all of that...where did I go wrong?
For the crust: It was a pie crust consistency with no flavor, very chewy and hard. I expected more of a shortbread cookie kind of crumbly texture. Did I press it in too hard? Not cut the butter well enough? Should I have not cooled it before putting the
lemon mix on top?
For the filling: I combined the dry first then added the wet, mixed until there were a few bubbles...Did I not mix well enough? Should I have added the dry to the wet? As for the flavor, I used on of those natural pre-packaged lemon juice things...should
I have used real lemons, maybe some zest?
I'm going to do another attempt tonight, so any help would be much appreciated! Just the memory of scraping that failure into the trash is heart-breaking...I mean, when you want a lemon bar, you want a lemon bar!!!!
