Cabbage Roll Casserole

I woke up with a hankering for cabbage rolls, without the ambition to roll. This recipe rocks!!! I added one more 15oz can of sauce, a tablespoon of brown sugar and a splash of vinegar. I wanted to wait untill day 2 to review, and it was just as good or better. As much as I LOVE rolls, I won't be doing them anymore.

Cheeseburger Soup I

I really liked this soup. The only thing I changed was adding two cloves of chopped garlic, some fried bacon and Valvetta vs cheddar. I also used frozen cubed hashbrown potatos only because thats what I had. To the person who said they didn't add the celery & carrots because thats not in a cheeseburger, no wonder you gave it only 3 stars. This is soup, not a cheeseburger and virtually every good soup starts with onions, celery & carrots (and garlic in my opinion). I served this to a group of 6 guys during a fishing trip and it got 12 enthusiastic thumbs up.

Microwave Oven Peanut Brittle

This recipe rocks!! Having never made brittle before, or any candy for that matter, I didn't want to have to going out and buying a candy thermometer or worry about things like "hard ball". I'm not even sure if 700 watt microwaves are even made anymore, but mine is a 1500, which was made in 05. I followed Mariezee's time exactly and everthing turned out just awesome. I followed the original recipe exactly as well. I made 5 batches today and each one turned out perfect. I have a lot of reicpes on this site saved, but this is one of the best ones I've made in a while.

Broccoli, Rice, Cheese, and Chicken Casserole

I used 2 1/2 cups of leftover roasted chicken and followed some of the advise of others here. Used a quarter lb of cubed valveeta and some mozerella and swiss I had laying around. Another reviewer suggested 1/2 cup milk and 1/2 sour cream. Did that, along with 1/2 packet of onion soup mix. Also added 2 tablespoons of Miracle Whip, a tablespoon of lemon juice and sprinkled Paprika over the top once it was put together. This is a great base recipe to add whatever touches you like. 2 Adults and 1 5 year old ate almost the whole pan. I couldn't stop. With salad and garlic bread, this was a winner.

Slow Cooked Corned Beef for Sandwiches

This was my first attempt at corned beef so I don't have anything else to compare this too. We planned on Reubens for dinner and the only way I've made them in the past is buying the deli sliced corned beef. This Was AWESOME. Cooked in the the slow cooker - 6 hours on low and the last 2 on high. Did one 3 lb brisket, but didn't reduce any of the other ingredients. It made about 7 nice sandwiches. So good in fact, I went out and bought a 4 1/2 lb brisket to do again next weekend.

Delicious Ham and Potato Soup

Well, like everyone else, I used this as an awesome base and just did a couple of things different. First I fried up 4 diced slices of bacon and set aside. Dumped the grease, leaving enough to sweat onions, carrots, celery and a clove of diced garlic. Followed remainder of recipe, adding a 1/4 lb of Valveeta and the bacon at the end. Split Pea and Ham has always been my go to soup, but that may change now. Simply Awesome! Our 5 year old even loved it.

Cheese Soup with Broccoli

Butternut Squash Soup II

This was my first attempt at a squash soup. We got nailed with 20 inches of snow the last two days, so I figured it was a good day to experiment. I followed the recipe as it was written with these additions: 1 reg potato/1 sweet potato 1 full head of roasted garlic - roasted in olive oil for 40 minutes 4 oz Light Cream Cheese 2 12 oz Packages of Frozen Cooked Winter Squash instead of peeling, seeding and cooking a butternut squash. This was fabulous. Topped it with Garlic/Cheese Croutons and a dab of sour cream. Made some corn muffins to make a complete meal, enjoyed sitting in front of the fireplace.

Pork, Broccoli and Rice Casserole

I've been looking for a good leftover pork recipe and this fit the bill to a T. It's very similar to a Chicken Divan recipe (minus the rice) I like to make. I didn't have cream of celery soup, so I instead used 1 can of cream of mushroom and 1 can of broccoli cheese. During the last 8 minutes I added shredded cheese and topped with croutons before putting it under the broiler. It was fabulous. I would also think that a box of dried stuffing mix (Stove top or similar) would also be a great addition. Thanks - This will be a day after staple whenever we have pork roast or leftover tenderloins.
