Aunt Mary's Eggplant Balls

LOVED it! Possibly the only way I will be making eggplant in the future. Easy and blends well with pasta and sauce.

Very good. Came out of mini loaf pan perfectly. Cooked well. Tasty. Firm, not too moist.

It was okay. Too heavy to lift out of the mini loaf pan without some of it sticking to the bottom or around the edges. Very moist though. And tasty.

BBQ 'Pulled' Tuna Sandwich

Easy and good. My husband and boys couldn't guess what meat it was. I'll be making it again. Perfect use for 1/2 bottle of barbecue sauce that was in my fridge and also Costco size pack of tuna cans.
