Hamburger Potato Casserole

Just a real nice casserole. Needed 2 hrs in oven, prob because I used a casserole dish and it was not as spread out. But so worth the wait. Hubby put ketchup on, I liked it w/out. Awesome leftovers, too.

It was not creamy enough for me. I prefer the recipes with cream soup in them as they make better leftovers. I am all about the leftovers!

Two Ingredient Pumpkin Cake

I made it, added the eggs as suggested and frosted w/cream cheese frosting. It was fine but not super moist as expected. I was up to 3 ingredients, isn't the regular box just 4 (mix, egg, oil, water?). If the point is to be simple just make the box as directed. If you are looking for a moist flavorful spice cake then look up another recipe.

Baked Garlic Parmesan Chicken

No changes needed, moist & tender and ready for your favorite sauce or salad dressing. There is a baked chicken nugget recipe that is very similar and equally good. The idea is a chicken that will please little ones who want to put ketchup or ranch dressing on and big one who like to use hot wing or bbq sauce. It is a wonderful and versatile chicken. I did actually use "seasoned" chicken breasts from the deli counter but since I loathe people who give a good review only after changing the entire recipe, I only mention it in case, like me, it happens to be what you have on hand.

Big hit with my family! Did not seem like too much oil. I had to bake a little longer than suggested as center was not set. Also, I used cream cheese frosting from a can, too easy!

Yankee Mint Julep

Made these for the Derby and friends begged me for them again yesterday. I actually planted mint in a pot, very easy to grow and a lovely garnish. Remember, the better the bourbon the better the cocktail! Thanks for sharing.

Honey and Rosemary Sweet Potatoes

perfect way to prepare sweet potatoes! I mixed maple syrup and honey (because i was low on honey) and I only had dried rosemary so I used the full amount. Also sprayed canola on the foil to prevent sticking. remove from foil to serving platter immediately & enjoy.

Grilled Asian Chicken

simply perfect. i did marinade w/soy, oil & garlic for 2 -3 hrs before grilling. Made 2x marinade, used some to baste. Served w/fresh clean baby spinach on a plate, put hot cooked brown rice in center then top w/chicken breasts, pour hot sauce over. garnish w/orange or berries. lovely!

Country-Style Grilled Ribs

Very good! I always use a dutch oven w cover when cooking to keep ribs moist and juicy. Sauce was subtle and allowed the flavor of the meat to come thru. Hubby bbq'd for only 6 min.

Uglies

Mugliess! Mini uglies. I used a mini-muffin pan, quartered each biscuit and baked 10 min. Great for kids or as an appetizer. I have left over mix, probably could have used 3/4 lb beef, etc for 32 minis. You could make the meat mix a day or two ahead, or even freeze. Thanks for sharing!

Lamb Ribs with Honey and Wine

Easy and impressive! I never made lamb before and this was wonderful. I used lamb chops because my butcher doesn’t carry lamb ribs (except for the standing rack – don’t get that!) I reduced the cooking time to 35 minutes but that was the only change I made. This was so easy to prepare and very juicy. I served it with jasmine rice with peas. Definitely recommend this to serve for company! Enjoy.

Awesome Easy Pasta

I used fresh spinach instead of peas (just tear and add to sauce first, cook for 2 min, add chicken, etc). i also used chicken fajita strips (buy a bag at sams club) and use really good bacon for better flavor! awesome and easy!

Baked Honey Mustard Chicken

Wonderful! I used prepared honey mustard, a little extra honey and thinned it w/olive oil. Didn't bother to marinade, just grilled the breasts and spread on at the end of grilling. Son and hubby both loved it. I will make this again.

Italian Spaghetti Sauce with Meatballs

Good stuff - no changes needed! I was nervous about NOT making all the changes recommended by others but it was very good. I must confess to browning my meatballs a bit before adding to the sauce. Maybe next time I'll be brave enought to toss 'em in uncooked. I did remove some of the sauce before serving to puree and use for kids who do not like chuncky stuff in their sauce. Even worlds pickiest 8 yr old liked it!
