Chicken Chili with Black Beans and Corn

I am always looking for a different way to cook healthy, to keep from becoming bored. I tried this recipe, but put my own spin on it. Instead of Crushed Red Pepper, I used canned Chipolte Peppers, (add to taste, not the whole can unless you like super hot). And I also added a cup of Sun Dried Tomatoes in addition to the can tomatoes. Just because I like the flavor and use them whenever possible. I also used real garlic. I served it over rice and it was excellent!

Pumpkin Bread

This pumpkin bread was wonderful! I made a few alterations in attempt to make them a little healthier. I used 3 cups white wheat flour and 1/2 cut ground flax seed. I used 1/2 cup oil and 1/2 cup applesauce. 1 cup white sugar; 1 cup brown sugar. I also altered the amount of spices, I used 2 tsp. Cinnamon, 2 tsps. nutmeg, the cloves and allspice I used what the recipe recommended. I also only baked mine for 60 mins. instead of 90 mins. as recipe recommended.

Bobbie's Oatmeal Cookies

I was in the mood to bake something. I tried these oatmeal cookies, they were good. I don't know why but the batter was kind of dry. Maybe next time I will use 1/2 less oats. Other than that very tasty.

Orange Chicken Stir-Fry

I made a few alterations in the cooking method. I sauteed my vegetables separately, then added them to chicken mixture. The family loved it!

Freezer Caramel Drizzle Pie

I made this pie to take to a dinner party. It was fabulous! It made 2 pies, so I had one to leave at home for the family. Everyone thought it was fabulous! It was super easy and a great dessert for summer! It also looks pretty. I will definitely make it again!

Coconut Cream Pie IV

I made this pie for my 48th birthday! My birthday is in June, so I wanted something really good, and summery. I made the graham cracker crust, instead of making a flour crust. The only change I made to the recipe, was using fresh coconut milk. I used 1 cup, in place of milk. The pie was absolutely fabulous! The whole family loved it! I will definitely make it again!

Sweet Balsamic Marinade

I tried this marinade on chicken, it was really good. I think the brown sugar really makes the difference. I will definitely use this again. I cut up the chicken in bite size pieces and cooked on the stove top. I did not like how the chicken looked, because the balsamic turns it brown. Other than thought it was great.

Ratatouille Bake

This was very good, but there is one thing I would do different. I used a can of diced Italian tomatoes. I thought the dish was dry. Adding tomato sauce, or spaghetti sauce to the vegetable mixture would make it better.

Bacon Wrapped Hamburgers

I made these burgers for a BBQ when friends were coming over. I wanted something more than a plain burger. It was a hit. I added some diced jalapeno to the mix as well. I prebaked the bacon for a few minutes, till about 1/2 done; and wrapped the burgers fillet mignon style. Everyone raved about them.

Fresh Southern Peach Cobbler

I made this for my family yesterday. I did blanch my peaches, because they were pretty hard. It did make them easier to peel. It turned out very good, as expected. I stuck with the original recipe, other than adding a tsp. Vanilla to the peaches. I agree with a previous review, I would make 1-1/2 of the crust next time. But, overall it was excellent.

Slow Cooker Texas Pulled Pork

This is the best pulled pork ever. Super easy, and everyone loves it. I have made it 3 times in the last few months. I actually get a craving for it. I also have used this sauce recipe as a marinade for brisket. I have a small crock pot, so I cut a 4lb. shoulder in half, freeze the other half to make later. I make the full recipe other than that, and just let it go all day. It makes enough for the 3 of us to eat for supper, and leftovers for the next day.

Greek Chicken Pasta

I had some chicken thawed out..had planned on a greek pasta salad. But it's too cold for that today. So...found this recipe. It was awesome. I had a half jar of marinated artichokes from a meal I did a few days prior, and a sprinkle of Feta cheese left. It didn't matter still turned out awesome. I didn't have any lemons, so didn't use the lemon. Used one roma tomato, and 2 chicken breast. Quick, easy and full of flavor!
