Hi, I an 47 years old, mother of 3 grown children. Now living alone for 2+ years. I quit cooking for a while, because I felt like I had no one to cook for anymore. That has all changed, because I have myself to cook for! Now I cook exactly what I want, when I want. I always enjoyed cooking for my family, but it did still carry that burdon, of a choir. Now, its just all fun!
My favorite things to cook
I enjoy everything I cook. Doesn't matter what it is. Muffins, entrees, cakes, you name it.

Greek Chicken Pasta
I had some chicken thawed out..had planned on a greek pasta salad. But it's too cold for that today. So...found this recipe. It was awesome. I had a half jar of marinated artichokes from a meal I did a few days prior, and a sprinkle of Feta cheese left. It didn't matter still turned out awesome. I didn't have any lemons, so didn't use the lemon. Used one roma tomato, and 2 chicken breast. Quick, easy and full of flavor!

Slow Cooker Texas Pulled Pork
This is the best pulled pork ever. Super easy, and everyone loves it. I have made it 3 times in the last few months. I actually get a craving for it. I also have used this sauce recipe as a marinade for brisket. I have a small crock pot, so I cut a 4lb. shoulder in half, freeze the other half to make later. I make the full recipe other than that, and just let it go all day. It makes enough for the 3 of us to eat for supper, and leftovers for the next day.

Fresh Southern Peach Cobbler
I made this for my family yesterday. I did blanch my peaches, because they were pretty hard. It did make them easier to peel. It turned out very good, as expected. I stuck with the original recipe, other than adding a tsp. Vanilla to the peaches. I agree with a previous review, I would make 1-1/2 of the crust next time. But, overall it was excellent.
