Tater Tot Casserole III

I brought this to a potluck dinner for step-son's hockey team. It was GONE by the time came to clean up! I didn't add the butter/cornflake topping because I didn't have any cornflakes & really didn't think it was necessary. And I didn't add the seasoning salt because I didn't have it on hand either. But parents & kids alike raved about it & I got a few requests for the recipe. No one had ever heard of Tater Tot Casserole but I'm sure it'll be on a few tables in the near future! Thanks for sharing the recipe!

Cajun Compromise Catfish

I tried this recipe as my first foray into cooking catfish. It was easy to follow and came ouot pretty good. The only problem we had with it was it was too salty from the cajun seasoning (Tony Cachere's). I doubled the dry ingredients per other reviewer's suggestions, and still had to make more when I had about 1/3 of my fish left and not enough breading. For the second batch of breading I skipped the seasoning and added the spices myself - garlic powder, ground cayenne & chili peppers, and a dash each of paprika & cumin. Much better because it wasn't salty. All in all a good recipe but watch out for the salt in your seasoning!

Stuffed Mushrooms III

I made this recipe as posted, with the exception of adding a little minced garlic to the stuffing mixture & a little wine to the pan I put the mushrooms in. The overwhelming taste of ricotta causes the flavor to be very bland. I even used the "good" parmesan cheese (not the powdered stuff in the green can I give to my kids..) but it didn't help. I'm thinking that maybe subbing cream cheese for the ricotta would help the flavor as well as the texture as ricotta tends to be grainy. Not the worst 'shroom recipe I've treid but I'm still on the hunt for the Holy Grail of stuffed 'shrooms!

Savory Crab Stuffed Mushrooms

These were very bland. I followed the recipe exactly as posted, but found them to have more of a bread crumb flavor than anything else. I will not be making these again.

Crab Stuffed Haddock

This was good. Labor intensive & definitely not cheap to make (weel, maybe if you use the canned stuff but I used fresh), so probably won't make again. Have found better ways to make haddock that is better tasting & cheaper. BUT, if you want to impress someone with haddock this is the recipe to do it with. But use fresh ingredients not canned - there's no comparison!

Broiled Tilapia Parmesan

I used this on haddock instead of tilapia (not overly adventurous when it comes to fish!) and it was GREAT!!! Husband and teenager deemed it a keeper - made exactly as recipe stated (with the change of fish) and wouldn't change a thing. Except for trying to find a lower salt parmesan - do they make it?!

Stuffed Mushrooms Casino

I rated this 4 stars because it was good. Simply enough. However, I don't think I'd make again. Don't get me wrong - I ate my fair share! I made exactly as stated; with the exception of pouring a little white wine in the bottom of the pan to keep them from sticking. I think the salt in the Bacon Bits (the real thing, as reviewed by another rater) was overpowering to the recipe. Maybe just using less of it would be enough to improve on the dish; just enough to give the bacon flavor without overpowering. That is really the only reason I can't rate it a 5 - it was salty! Thanks for submitting this!

Warm Blue Cheese Dip with Garlic and Bacon

This dip was excellent!! It is thick, so use sturdy crackers or bread (I used Triscuits & white baguette). I used only 6 slices of bacon as others suggested, and next time I think I'll use a little more garlic (personal preference - LOVE garlic!), and a little more 1/2 & 1/2 and about a quarter less cream cheese, just to thin it a little. But it's excellent as is too! My husband & I ate the WHOLE thing one night - OOPS!! ;0)
