Corn Casserole III

I give this three stars because it is a great potluck recipe...simple, cheap and people seem to really like it, but for my personal taste I think its just blah. It's smells just heavenly while it's baking, but the flavor (or lack of) is just disappointing. I would not make this for a family meal, but it's a failsafe recipe for potlucks, as people just scarf it up...go figure.

Brazilian Black Bean Soup

This is a pale imitation of Brazilian black bean soup (feijoada), and its kind of expecting steak and getting a McDonalds hamburger instead. It's not really HORRIBLE, but it ain't that great either. I thought it was too salty, kind of gloppy and the orange juice was overpowering in it, rather than accenting it. I would NOT make this again.

Baked Oatmeal Squares

The recipe as is deserves 5 stars, but I can never leave well enough alone and had to mess around with it to make it a little healthier. First, I used zucchini puree in place of the oil (garden is overflowing with the stuff so I'm adding it to EVERYTHING). Secondly, I used yogurt in place of the milk. I cut back slightly on the sugar because the yogurt was sweetened. Thirdly I added an additional 1/2 cup of dried blueberries along with the raisins because I wanted to use the rest of the package up. I also threw in a fistful of wheat germ. I did have to increase the cooking time (40 min) , but its well worth it. These turn out moist and chewy and I'm planning to make sure I have some always on hand this school year. All three of my kids love them for breakfast. "You mean I can REALLY have cookies for breakfast?"

Hot Breakfast Couscous

I LOVED this and I absolutely disagree with the reviewers who said there is not enough liquid. I think they are expecting the couscous to be an oatmeal substitution. I, on the other hand, expected sort of a breakfast "pilaf" and that is exactly what I got. If you want something more like hot cereal then add more liquid. I think the recipe is great as written.

Okra, Corn and Tomatoes

I always hated okra as a kid but my mother always boiled it (to death).With three kids, I'm always looking for new ways to fix vegetables to teach the kids that good nutrition doesn't have to mean boring. This was it. My daughters devoured it, and my picky, veggie HATING son simply ate it without a fuss-that RARELY happens. So this one is going in the file for keeps. Personally, I try not to eat meat but I can handle the small amount of bacon used for flavoring in this. I'm going to try the recipe using olive oil and play with the seasonings a bit though to see if I can't make it more vegetarian friendly. Thanks for a great recipe!

Creamed Chicken for Biscuits

This was simple, home cooking and we liked it. I did "doctor"it a little, by omitting the almonds, and using mixed vegetables instead of peas. I also used vegetarian "chicken" cutlets, since I don't eat meat. It was nice to have an easy, home cooked recipe that doesn't call for canned soup.

Nutburgers

I'm going to give this four stars, because this recipe prepared as a burger didn't impress me much, and I would have given it maybe one star, but I used the leftover mix (I didn't want to waste it)as a base for vegetarian wontons and it was FABULOUS. I added some onion, carrots, snowpeas, oyster sauce, ginger and a little flour and it made a wonderful filling. I took them to work and NOT ONE PERSON could tell they were meat free, and they were begging me for the recipe.

Butter Bean Burgers

These were delicious. I've never been a fan of butterbeans (lima's on steroids) but somehow ended up with several cans of them in the pantry. These were really tasty and even better the next day. I stopped eating meat a while ago and I'm always looking for new recipes to add to my files and this one is a keeper. Even my meat eating husband and kids liked this and said they would gladly eat it again. I did lightly dredge the patties in flour and let them sit for awhile before frying them, and I also added an extra clove of garlic. Thank you for a quick, and easy recipe! **I have made these MANY times since I originally reviewed it and I can tell you that they are equally delicious with Black beans, pintos, limas..even garbanzos. I have experimented with different spices (like making an italian version to use as a substitute for chicken parmesan) and they have all been just great. This is a great recipe on its own, or as a base..and they freeze BEAUTIFULLY!"

School Lunchroom Cafeteria Rolls

These were exactly what I was looking for! I followed the recipe to a T (although I scaled it down by half) and they were perfect. My husband and kids couldn't eat them fast enough. I ended up making a second FULL batch the same day! Since then I've made them several times and frozen the dough once the rolls are shaped. They thaw beautifully. I have made one small change though, I started substituting whole wheat flour for 1/3rd of the white flour. They don't rise as high, but the flavor is not affected, and I'm getting some whole wheat into my kids. Thanks for a FABULOUS recipe!

Wilted Spinach Salad

Black-Eyed Peas and Tortillas

I've made this several times now, and we really enjoy it. I do have to tripe the recipe to feed my large family. I also alternate between grilled corn tortillas and whole wheat ones. I also add more garlic than the recipe calls for (we love garlic) and I add a couple drops of liquid smoke seasoning.This is terrific with sour cream and guacamole. Thanks for the recipe!

Aunt Rachel's Cheese Souffle

The first time I made this, I made it exactly as Pat. C. directed, and it was pretty good. Not amazing or anything, but a decent recipe and easy enough to put together and very nice for a light dinner with a dise salad. The second time I made it, I didn't have any bread on hand (other than the squishy "pillow" bread which isn't really good for anything except getting the kids to eat peanut butter) I DID have some asiago cheese bagels from Panera that were getting stale though. I sliced them in half, and then in half again (so I had 4 thin circles from each bagel) and LET ME TELL YOU it was OUTSTANDING! WOW! I plan on making this again the next time we have overnight guests, and I will buy the bagels just for this. Even my six year old, who turned up her nose at it the first time, ate two helpings when I made it with the bagels. I wish I could give it more than five stars. Thanks for a great recipe!

Steak Salad (Ranen Salad)

I loved this! It was simple and delicious. I served mine in warm pita bread. The blue cheese and walnut combine with the beef to give this an incredibly decadent flavor. I've made this also with grilled shrimp and it was divine!Thanks for a great recipe!

Grilled Chicken Citrus Salad

This was really good...the only changes I made were: I used sweet red onion in place of the green onion (I didn't have any) and I tossed in a few black beans that were sitting in the fridge (waste not want not!) It was wonderful! Thanks for a great recipe.

Creamy Potato Leek Soup II

Shrimp Lemon Pepper Linguini

Delicious, and EASY. I followed other reviewers suggestions and increased the amount of sauce ingredients and it was perfect. I've made this three times now. The second time I grilled the shrimp on skewers and the third time we used grilled chicken breast in place of the shrimp and it was fabulous.It's very light and perfect for summer. Top it with some fresh grated parmesan cheese and some fresh tomatoes on the side and you have the perfect meal. Thanks for a wonderful recipe skini!
