BUSH'S® Black Bean and Cheese Lettuce Wraps

This recipe was really good! THe proportions of the recipe are WAY off though. There was not nearly enough rice, and I only needed 3 Tb. of the 1/3 cup Italian dressing. I put half of the feta in the rice and sprinkled the rest on top. Great with lime juice squeezed on top!

Chocolate Hazelnut Mocha Cappuccino Pie

This recipe was very, very easy. I used all of the milk and it was perfect. I used white chocolate pudding mix as well as a few Tbsp. of chocolate pudding mix to make it darker. I also used 3+ Tb. of Mocha powder to make the flavor stronger. I had the chocolate chips and nuts, but in the end I used half a bag of milk chocolate toffee pieces instead because I thought the flavors went better together. It got rave reviews, and everyone wanted to know how to make it.

Salsafied Chicken and Rice

I was SO surprised by this recipe! It was delicious! I used Instant brown rice, and for some reason, it took a lot longer to cook. I also used double the salsa and half the cheese. I served it as a dip (casserole consistency) with tortilla chips! Yum! I will definitely make again.

Eggplant and Zucchini Casserole

This was tasty. My husband loved it! I did not use stuffing mix because I wanted a lighter version. Instead, I sprinkled Italian bread crumbs over each layer. Yum!

Mozzarella Meat Whirl

This was just the recipe I was looking for! It is like what a restaurant near my home serves, but healthier because I used 1 lb. ground turkey and 1/4 lb. turkey Italian sausage. Also, I made the glaze with spaghetti sauce (still using the Worcestershire) for a more Italian flavor. I will definitely make this again.

Big Soft Ginger Cookies

Tasty cookies but not as dark, molasses-tasting as I prefer. Also, they were a bit dry but when I took a second batch out earlier they were undercooked. The flavor is great, though, i will keep looking for a molasses ginger cookie recipe!

Polenta and Vegetable Casserole

This was pretty good - not the best recipe ever, but made a good, hearty meal. I used canned mushrooms instead of fresh and only half of the fajita seasoning-which was very salty. Also, I left out the salsa because I dislike the flavor of bottled salsa in cooked recipes - overpowers the vegetables. Would be good with salsa and sour cream on the side!
