My Kid's Favorite Zucchini Bread

Would have given 5 stars, but I found that the bake time and temperature needed adjustment, and loaf pan size wasn't specified. Other than that it was one of the best zucchini breads I've tried.

Ratatouille Bake

Like everyone, I made changes to suit my own style and ingredients, but the basic recipe here is a wonderful canvas to build on. It was wonderful. My changes---I used a pint jar of tomato sauce (home canned) in place of the diced tomatoes, sausage cheese torteloni in place of ravioli because that's what I had on hand, added mushrooms, used fresh parsley and pesto concentrate from a tube instead of dried because dried parsley and dried basil are about the most useless and flavorless dried herbs there are, and I added a little bit of grated parmesan to the mozzarella just because I wanted to finish up the bit I had.

Chocolate Biscotti

I'm a well-seasoned baker, but I had major trouble with this recipe. I found it spread much too much, and even with a good serrated knife they were very difficult to cut. After two attempts I'm writing this recipe off as a disaster not worth trying again.

Apple Cheese Quick Bread

The only reason I didn't rate this recipe 5 stars is that I had a serious sticking problem. I ended up breaking both loaves in half removing them from the pan. It may be that apples and cheddar are a natural combination for me, it may be that I despise Swiss cheese in anything, or it may be that cheddar is what I had on hand, but I used sharp cheddar in this recipe. It was delicious. Also used a combination of apples on hand (Spy, Winesap, Johnathon) instead of Granny Smith which is bland when cooked.

Pumpkin Gingerbread

OH MY! This is wonderful! My changes: substitute 1 cup whole wheat flour for 1 cup all-purpose flour, 1 cup brown sugar (dark, preferred) for 1 cup white sugar. Call me frugal, but I also substituted the reserved liquid from fresh-cooked pumpkin for the water in the recipe. Apple cider would also be a good substitute. Top this with whipped cream, and you have dessert.

Round Steak Sauerbraten

The gravy was a bit thin. Will use less water next time. There will definitely be a next time, though. The flavor was excellent. Four diners, a double batch and no leftovers. It was a hit here.

Potato Chip Cookies VI

This recipe is awesome!We thought Grandma's recipe for Potato Chip Cookies was gone forever, but this is so very close. Doing a little happy cookie dance at my house. One note, I got nearly 6 dozen cookies out of this recipe, not the 3 dozen stated.
