Double Tomato Bruschetta

Reviewed: Apr. 28, 2015
Can't rate this for the cheese part, but the bruschetta topping itself can't be beat. I like to spread the crostini with goat cheese, then the tomato topping.

Finnish Pannu Kakku

Reviewed: Mar. 1, 2015
It may be technique, as it was the first time I prepared this, but it turned out a little differently than the pannu kakku that I've eaten in Michigan's U.P. It was a little less custardy than I'm accustomed to, and did not puff up and then "fall". It was, however, very easy to do and absolutely delicious as it turned out. After looking at some versions on Scandinavian cooking I added vanilla and lemon zest.

Sweet and Spicy Green Beans

Reviewed: Jan. 26, 2015
Husband and I loved it. I think next time we'll bump up the garlic chili sauce a bit. This would be equally delicious made with asparagus. Husband says he thinks it would be a good treatment for kale, too.

Melinda's Porcupine Meatballs

Reviewed: Jan. 6, 2015
This exact recipe was in a cookbook my mother gave me when I moved out on my own, and I've been making it for nearly 30 years (sans the celery salt, which I'm not fond of). It has always been a family favorite. My husband adores stuffed cabbage, but I'm a lazy cook and hate the work involved. Solution---I cook a layer of chunks or small wedges of cabbage on top of the meatballs (I've even used a bag of shredded cabbage for cole slaw in a pinch). We call it "Unstuffed Cabbage". :-)

Bread Pudding II

Reviewed: Oct. 16, 2013
Came out perfectly. The mister said of it, "I could eat the whole pan". I like any recipe that will get me that kind of response.

Savory Onion Bread

Reviewed: Nov. 18, 2011
Great recipe with lots of room for variations, but definitely too much salt.

My Kid's Favorite Zucchini Bread

Reviewed: Aug. 1, 2011
Would have given 5 stars, but I found that the bake time and temperature needed adjustment, and loaf pan size wasn't specified. Other than that it was one of the best zucchini breads I've tried.

Ratatouille Bake

Reviewed: Feb. 15, 2010
Like everyone, I made changes to suit my own style and ingredients, but the basic recipe here is a wonderful canvas to build on. It was wonderful. My changes---I used a pint jar of tomato sauce (home canned) in place of the diced tomatoes, sausage cheese torteloni in place of ravioli because that's what I had on hand, added mushrooms, used fresh parsley and pesto concentrate from a tube instead of dried because dried parsley and dried basil are about the most useless and flavorless dried herbs there are, and I added a little bit of grated parmesan to the mozzarella just because I wanted to finish up the bit I had.

Cinnamon Ice Cream

Reviewed: Feb. 10, 2010
The contributer was spot on about this being just like the cinnamon ice cream at Rays. I followed the recipe exactly, and wouldn't change a thing.

Chocolate Biscotti

Reviewed: Dec. 22, 2004
I'm a well-seasoned baker, but I had major trouble with this recipe. I found it spread much too much, and even with a good serrated knife they were very difficult to cut. After two attempts I'm writing this recipe off as a disaster not worth trying again.

Apple Cheese Quick Bread

Reviewed: Nov. 7, 2004
The only reason I didn't rate this recipe 5 stars is that I had a serious sticking problem. I ended up breaking both loaves in half removing them from the pan. It may be that apples and cheddar are a natural combination for me, it may be that I despise Swiss cheese in anything, or it may be that cheddar is what I had on hand, but I used sharp cheddar in this recipe. It was delicious. Also used a combination of apples on hand (Spy, Winesap, Johnathon) instead of Granny Smith which is bland when cooked.

Pumpkin Gingerbread

Reviewed: Nov. 7, 2004
OH MY! This is wonderful! My changes: substitute 1 cup whole wheat flour for 1 cup all-purpose flour, 1 cup brown sugar (dark, preferred) for 1 cup white sugar. Call me frugal, but I also substituted the reserved liquid from fresh-cooked pumpkin for the water in the recipe. Apple cider would also be a good substitute. Top this with whipped cream, and you have dessert.

Round Steak Sauerbraten

Reviewed: Aug. 5, 2004
The gravy was a bit thin. Will use less water next time. There will definitely be a next time, though. The flavor was excellent. Four diners, a double batch and no leftovers. It was a hit here.

Potato Chip Cookies VI

Reviewed: Jan. 14, 2004
This recipe is awesome! We thought Grandma's recipe for Potato Chip Cookies was gone forever, but this is so very close. Doing a little happy cookie dance at my house. One note, I got nearly 6 dozen cookies out of this recipe, not the 3 dozen stated.
