Maple-Mustard Glazed Pork Chops

I've prepared this twice in the last 2 weeks and it will be in regular rotation for me, ongoing. I used boneless pork chops the first time and a 1lb pork tenderloin the second time, both successfully. I did modify the recipe a bit, and used steak & chop grill seasoning I got from Aldi instead of the salt, pepper, onion powder and paprika. So, I combined the 1/4 cup of brown sugar and a tablespoon of the grill seasoning for the dry rub. I only marinated the meat for a couple hours each time and then followed the rest of the recipe. Super delicious!

Summer Tomato Pie

I follwed the recipe precisely with phenomenal results. Its delicious, but mainly because of the sweet, ripe, end of summer home grown Iowa tomatoes my mom had. If you don't have access to great tomatoes, i wouldn't recommend making this.

Grandmother's Buttermilk Cornbread

Really excellent cornbread...very tender and moist. I made one adjustment and cut the sugar down to a scant half cup. Still slightly sweet and to me, perfect.

Cindy's Country Style Creole Pork Roast

Delicious! I used a whole seeded red bell pepper instead of 1/2 a green pepper. By accident, I added the entire 2 tablespoons of creole seasoning into the puree. It tasted fine and it eliminates an uneccessary step. I used a 4lb. pork loin instead of a roast. This is so good as a leftover for tacos or in chili.

Cha Cha's White Chicken Chili

Very good with the following substitutions: I used a 7oz can of chopped green chiles and omitted the jalapenos because i'm not really a fan. I also cut the cayenne in half. I love heat, but 1/2 teaspoon is perfect in my opinion. I also used 4 cups of chicken stock instead of the 2 cans of broth, giving it a more pronounced chicken flavor. To make the chili thicker, I mashed the beans up a little bit after adding them to the pot. Absolute Mexican Cornbread is the perfect compliment to this chili.
