Pastelon de Platano Maduro (Dominican-Style Yellow Plantain Pie)

We make this in Puerto Rico too! Most of my family doesn't mash the plantain, they slice it and layer the bottom. I have eaten it both ways and it's so yummy!!

Greek Pasta with Tomatoes and White Beans

I like this recipe because it's simple and versatile. I had to tweak a few things because, I couldn't find the Italian style tomatoes and I used half kale/half spinach (because the kale was about to go). The *major* change I made was making it all using one pot. LOL Made the sauce while pasta was straining. :) Great recipe.

Slow Cooker Barbeque

I used a round of pork and Sweet Baby Ray's BBQ sauce. I didn't have onions so I used onion soup mix and it came out SO GOOD! It wasn't greasy & maybe next time I will try it with beef.

Puerto Rican Tostones (Fried Plantains)

Tostones in English would be "Twice Fried Platains" (since you are frying them twice) "Fried Platains" are Amarillos/Platano Frito. I never used to soak the platains before, now I do. I soak them for about 2-3 hrs in salt water. I drain the water and pat dry w/ a paper towel. They come out crispier and tastier! :) If short on time, I do not soak them.

Fantastic Black Bean Chili

I didn't have red wine vinegar, I used balsamic instead, also added cumin and coriander. The balsamic vinegar gave it a hearty smoky flavor!
