My family LOVES these potatoes!!! I made a couple of small changes, I was also warming a spiral ham at 325, so I put them in with the ham at the lower temp for a half hour. When I took the ham out I boosted the temp to 475, sprinkled some seasoned salt on top, gave them a stir and put them back in for 8 to 10 minutes to brown them up. I also, on the advice of many other reviews, used rosemary instead of oregano, and yams instead of sweet potatoes, just because they were what I already had. We could not stop eating them, and I'm sure in meals to come I will never have these as left overs.
