Sausage Pasta

I enjoyed this but made it much lighter by using hot italian chicken sausage (only 3.5 grams of fat per serving). Used fresh basil and spinach. I'm sure that fresh tomatoes would be great. A quick tasty healthy dinner.

Kung Pao Chicken

Everyone thought that this was just ok. I cut back half of the chile paste for my son and it was still fairly hot. The sauce had an odd flavor.

Jalapeno-Blue Cheese Burgers

I thought this was good but there is no way that I need to eat a 1/2 lb burger. I scaled it to 2 servings and made 4 burgers which were surprising large after adding the peppers and cheese. I used pickled jalapenos which worked out fine.

Pretzel Turtles

Very easy. I toasted the pecans on the stove in just a minute or two. They are rock hard out of the fridge but perfect at room temp. My package of rolos made 60 or so and all fit on one baking sheet.

Rempel Family Meatloaf

Slow Cooker Chicken Taco Soup

I really enjoy this recipe as fall is rolling in and its chilly outside. I was cleaning a bunch of chicken and decided to throw this together as I was actually preping for another meal on the weekend. I am enjoying it all week for lunches and easy week night dinners. We like spicy so I used chili ready beans and hot rotel tomates. Also made the recommended Bill Echols Taco Seasoning. Also Must serve with co-jack, sour cream and crushed tortillas or crackers.

Brown Sugar Meatloaf

Love this recipe because it is so good, super easy and not a big mess. We used Ritz crackers and put some sauce on the bottom to prevent sticking but most on top. Good comfort food.

Chicken Marsala

I have not had Marsala in a while and forgot how good it is. This sauce is so good that it would be a shame not to make double. I beleive that it is important to use a good sweet Marsala since it is the main ingredient! I also like my sauce thick and creamy so I added both a corn starch and water slurry to thicken plus some half and half for creamy decadence. I sauteed portabellas with minced garlic and served it all over angel hair pasta. Deelish!

Salsa Chicken

Tasty, moist and super easy. Put some salsa on the bottom and dumped the rest on top. Served with the mexican corn from this site which was equally good and equally easy.

Wow, so good and so easy. I used Trader Joes Roasted and and used pickled jalapenos. I just eye balled it and adjusted to taste. The garlic salt is a nice addition.

Rich and Creamy Tomato Basil Soup

I made a double batch because I was clearing out the tomato garden for the season and stuck pretty close to the recipe. The only problem is trying to figure out how much 4 tomatos really is. Some are saying romas which are so small compared to the monster brandywines I used. Very tasty and a bowl will fill you up for the afternoon. I sprinkled some parm on top of pieces of toasted sourdough french bread. It was like dipping your grilled cheese.

Honey Mustard Grilled Chicken

Wow, these were soo juicy and tasty. Grilled as directed and then moved them to the hot side of the grill to get those pretty grill marks. I would definitely make extra sauce for dipping. Will be part of the regular rotation.

Peanut Butter Noodles

This sounded wonderful and had a nice taste but I think the sauce was way too thin. I made a double batch of sauce and added rotisserie chicken, thinly sliced red pepper, carrots and steamed broccoli. Easy, healthy and low fat. I tried another from a different website that was creamy, smooth and wonderful. Maybe try again with less broth.

Asian Orange Chicken

I thought it was good but the family all said that the orange flavor in the sauce was too strong. I followed others and cut brown sugar to half cup. If you like crispy chicken then don't add the sauce till the end. Also be sure to mix warm water with the corn starcge before adding to sauce and add gradually because it will turn into a thick gel if you add too much. I added the chicken to brown rice and poured sauce over all. If you like to sauce on your rice you may want to make a little extra.

Garlic Chicken with Orzo Noodles

I never tried orzo before but really liked it. I took others suggestions and cooked orzo in chicken broth which was completely absorbed so no draining. Used italian style diced tomatoes instead of spinach so that the kids would eat it and added some extra garlic which gave it a little kick. I think the chicken could use more seasoning before cooking to add more interest.

Baked Garlic Parmesan Chicken

Tasty, easy, good but not great. I used panko instead of bread crumbs. I sprayed the panko coating with canola oil and set the oven to broil in the last few minutes to give it the extra crispy crust that we love. Four large breasts used all the oil and breading. I also believe that the panko adheres better if you coat the breasts with a light flour then dip into egg.

Turkey Tenderloins

Entire family loved it. We grilled the tenderloins and served with brown rice and green beans w/almonds. My daughter suggested trying this with chicken breasts. Quick, easy and virtually no clean up. Perfect for a busy week night.

Yogurt Chicken

Very moist and tasty. The yogurt added a little tangy touch. I sprayed the bread crumb topping with butter flavored cooking spray to cut down on the fat from the pats or butter. I would make this again because it was so easy and experiment with adding different spices.
