Honey-Topped Sweet Potato

Wonderful . . .I like the use of honey and brown sugar together. Could be enjoyed as a dessert if you really pour it on!

Broiled Tilapia Parmesan

Absolutely delicious. The Parmesan cheese and lemon gives the light fish an almost decadent quality. None left on our plates!

I made this soup last night and to say we were licking our bowls would be an understatement! I included garlic bread and the duo created a full meal. The soup is very savory and filling. Most of the flavor comes from the italian sausage so make sure you get the best possible. Definitely making again this winter/fall season!

BBQ Country Style Ribs

The lemon was such an interesting flavor. It delivered a bite just before introducing the BBQ sauce flavor. They could have been a bit more tender. Although, the texture was not bad. . . .about like steak. Would make again and cook longer!

Bianca's Green Chile Pork

Excellent and very easy (with the exception of cutting the meat off of the roast) It reminded me a lot of carnitas. I typically don't associate sherry with a mexican dish, but it worked wonderfully. It also was a hit with my husband who typically doesn't care of the spicy flavor of mexican food. Yet, it had just enough punch for me . . .will make again.

Boiled Chicken

Such a simple recipe yet, so useful!!! I cooked a huge batch and then use it in different receipes during the week. A handful sauteed in TexMex Spices works phenomenally well when whipping up some quick quesadillas. We also mixed BBQ sauce in it for speedy sandwiches. Add a little mayo, apples and walnuts a couple of days later for chicken salad. I got requests for it again immediately!!!

Burrito Pie

So easy!!! All family members went back for seconds. Chilled well for leftovers. I served with sour cream, jalepenos anda couple of different salsas.

Slow Cooker Adobo Chicken

Extremely easy and very delicious. But the best part was chilling the leftovers and creating an outstanding chicken salad by simply adding apples, walnuts and mayo.
