Curried Tuna Melt

This was sooooo good. I will make this again and again! I did make some changes due to not having everything. I used dried cranberries instead of raisins and I did not have any celery. I cut down the salt and added extra curry. I also used regular bread instead of english muffins. This is now my favorite way to eat tuna. Would be good with chicken too!

Baked Corn Pudding

I just made this and pulled it out of the oven. I followed the directions as stated. It came out as a previous cooker said, watery and seperated. Really weird. Tastes good, but now I dont really want to serve it for dinner. Maybe not only drain the canned corn, but press the liquid out of it?

Chicken in Creamy Pan Sauce

This is a really good base recipe. Almost anything can be added to it. I coated my chicken in flour with pepper, salt, garlic powder and onion powder. I then fried it as directed. I used homemade chicken broth, which I think makes a huge difference. I added some cut up zuccini to it (it is what I had) but I think any veggie would go good in the sauce. I diced up the chicken after it cooked and added that to the sauce and served over egg noodles. It was really good. If I followed the directions of the recipe I think it would be too bland, especially with a canned broth.

I used flaked coconut insead of chocolate chips (it is what I had on hand!) and added a heaping tablespoon of cocoa powder. These are so yummy!!!

Fish Tacos

I was so suprised by the jalapeno. I didnt have cayenne pepper, so I used a bit of paprika. I will NEVER do that again! I dont think I can use the full amount of cayenne pepper, but it does need some. I ended up using the whole jalepeno pepper though, no seeds. I dont like capers, so I omitted those. The sauce was even better the next day. I froze the leftovers, so I will see how they thaw in the next week or two. Didnt want to waste that yummy sauce. The batter on the fish was really yummy and thick. I would prefer to bake these instead of fry, so I might try that next time. Super yummy and very colorful! Thanks!

Ham and Cheese Quiche

I think the spinach makes the crust soggy because as it cooks it loses water, like mushrooms. Hmmm, maybe it was the mushrooms. Anyhow, I would used frozen spinach next time and drain it really well and saute some mushrooms so the liquid is not going to make the crust soggy.

Blueberry Boy Bait

YUMMY! I added 2 1/2 cups of Blueberries (we love blueberries!) and cut the sugar to 1 1/4 cup. It was perfect! Since I only have one electric mixer, I did the egg whites first and took them out and put them in a bowl, then I mixed the other ingredients together for 3 minutes. Then I folded in the egg whites. It seemed easier than transgering the batter. Thanks for the great recipe!

Famous Butter Chicken

This was sooooo good. I used Pappys seasoning with low fat saltines (no hydroginated oils). I didnt use all the butter either and it went fast in our house!
