Chicken Enchiladas I
I couldn't figure out why this recipe would not call for a regular can of enchilada sauce (I usually make my own verde with canned tomatillos) but went against my better judgement and used the jar of Ortega taco sauce. Nothing against the sauce itself, but in the end these enchiladas tasted like strong taco sauce and not much else. I tasted the filling and liked it, so I would recommend using an actual enchilada sauce instead of an entire jar of taco sauce.

Quinoa and Black Beans
My first quinoa recipe EVER, and what a fantastic introduction!! My only changes were cooking the grain in plain water, and I substituted fresh roasted sweet corn off the cob for frozen. The sweet corn made a big difference as it was this added "character" to the dish with the little pops of sweetness with each bite. I also finished the dish off with a squeeze of fresh lime to add brightness. Totally making again!!!!!
