Oatmeal Carmelitas

These were very good. I too doubled the recipe for a 9x13 pan - I doubled all ingredients except kept chocolate chips to one cup and used one cup of caramel topping. I think the amount of butter could be reduced also. I will probably reduce it by about 1/2 cup next time. This recipe is a definite keeper.

Jammin Good Bars

This were easy and delicious. DH couldn't get enough of them - said they were like raspberry pie. I would add a tad more sugar to the shortening mix next time - maybe 1/4 cup because I thought they could use a little more sugar. Other than that they were great.

Garlicky Summer Squash and Fresh Corn

This was very tasty - the only change I made was adding red pepper flakes at the end of cooking - about a 1/2 teaspoon. Perfect amount of heat to spice it up. Hubby loved it!

Chicken Enchiladas II

These were delicious! Hubby couldn't stop eating them. I took the advice of other reviewers and doubled the sauce and they came out perfect. I didn't have any green onions, so I substituted regular onions (cooked them in the butter till translucent)and I added sliced black olives and chopped tomatoes. This dish was so good!

My Best Clam Chowder

Wow - this was the best clam chowder my husband and I have ever had - we no longer have to drive to Newport to have clam chowder at The Chowder Bow. I used 5 cans of clams and added a little white wine (omitted the red wine vinegar). Fantastic!

Beth's Chocolate Chip Cookies

These were great. I took them to work and about four people asked for the recipe. I did add 4 cups of flour instead of 3 1/2 to make them more cake-like, as I like a softer cookie, and I have had my cookies spread while baking in the past. I also used three types of chips: chocolate, white chocolate and butterscotch. Yum!
