Chicken Chimi in the Oven

This was awesome! I didn't put the salsa mixture in the food processor because I was trying to speed up the prep time. Actually, I think I prefer having the salsa whole. Like other reviewers, I cut back on the amount of chili powder used. Also, since I had so much other food in the fridge to eat up, I put these in freezer bags to have handy as quick treats/dinners. I defrosted it in the microwave, then put it in the toaster oven for crispiness. In the last couple of minutes, I added cheese on top. Tasted just as good after being frozen as it was when it was fresh.

Baklava

Superb!!! Surprisingly easy to make. The only differences were that I only used about 1/2 of the butter, and only used 1 - 8 oz. package of the phyllo dough. I also used about 4 tablespoons of nuts on each layer, and ended up with about 5 or 6 layers.

Barley Chicken Casserole

Very good recipe. I did not add any bacon or green pepper since I did not have any, and I used chicken breast instead of dark meat. Also, I did not add mushrooms because of my husband. Next time I will add celery and more carrots to make it even healthier. The only downside is that my 2-year-old did not like all the seasoning and tried to pick it off the barley.

Chi Tan T'ang (Egg Drop Soup)

The good news is that it's very easy to make. However, I should have followed my instincts and pass by this recipe. Instead, I made it based on the reviews, and was disappointed. Sorry. The taste of the soy sauce and vinegar were too strong for my tastes. I had to water it down to make it edible. Amazingly, though, my picky 2-year old ate it. Go figure. I'll stick with my old recipe. Thanks anyway.

Good Old Fashioned Pancakes

These were the best pancakes I've ever had! They were so fast and easy to make, and were fluffy and moist. Also, they weren't sickening sweet like the store bought type.

Slow Cooker Beef Barley Soup

I must have a smaller sized crock pot because I was only able to fit about 5 cups of water. It tasted fabulous. The barley is a nice change from using potatoes all the time. By the way, I ended up adding the 6th cup of water after the soup was done in order to make it more liquidy and to cut down on the salty taste.

Turkey Loaf

Amazing Butternut Squash

The combination of the ingredients makes a nice, smooth taste. I followed other suggestions and cut down on the amount of onions. I thought there were still too many, but my husband loved it and literally ate half of the squash while standing at the stove.

Caramel Popcorn

This was very easy to make and the caramel was better than anything I've ever tasted from the store. Two bags of microwave popcorn work out perfectly for the amount of caramel. So worth the effort!

Roast Sticky Chicken-Rotisserie Style

I made this for Christmas dinner and received many rave reviews. The chicken was so juicy and flavorful. The folloiwng week, I used the same seasonings for a small turkey roast, which was a wonderful way to wake up boring turkey.

Turkey Empanadas Grande

So tasty! I didn't have any parsley or cilantro, but the remaining ingredients were perfect. The red pepper flakes gave a bit of a kick to it, and even my picky 1-year old ate it up. It tasted just like the empanadas my Argentine husband makes. I also didn't have any tapas (pastry actually used for empanadas)but it tasted great with some homemade tortilla shells.

Ham, Potato and Broccoli Casserole

I also used hashbrowns instead of french fries to avoid the soggy factor, but it was still too soggy and soupy for my taste. Perhaps frying the hashbrowns first to give them a crunch would be better??
