Vegetarian Tortilla Soup

I absolutely love this soup. I used have veggie stock and half chicken stock, added rinsed, canned black beans (as recommended in another review), and squeezed fresh lime juice into the finished soup. I wasn't able to get the peppers & onions together in frozen form, so just used fresh onion. I did add some garlic powder & onion powder as well. I will be making this again and again!

Butternut Squash Bisque

Absolutely wonderful! I'll echo previous reviewers regarding roasting the squash first; I cut and peeled it raw, and it was very difficult! Also, yes, go easy on the nutmeg; a little goes a lot further than you'd imagine!

Spinach Quiche

I love this recipe! I made it twice this week alone, so I could use up the extra pie crust. I did replace the mushrooms with diced ham, but otherwise stayed true. Delicious! You'd hardly think it was packed with iron-rich spinach!

Chicken Pot Pie IV

I love this easy recipe! Even my picky boyfriend requested it again! I'm very happy with the easy ways to customize this recipe-different "cream of" soups, more/less cheese, different vegetables, etc. We used extra chicken breasts we had grilled the previous night specifically to have for the pot pie the following night. Very very yummy!

Marie's Easy Slow Cooker Pot Roast

The 5 star rating for this recipe wasn't kidding! SO GOOD. My boyfriend was thrilled that I actually made something so "meat & potatoes," and we both really enjoyed it. I used what was labelled as a chuck roast at my store, instead of what they deemed a pot roast. That is the only change! :)

I really liked this recipe. I added salt & pepper, and halved the recipe and it still made a ton! Next time I will use more sour cream & more cheese than called for, but this is definitely going on my repeat list!

Pork Chops and Scalloped Potatoes

These were really tasty, and different than how I've had them before! It was really really time consuming cutting up the potatoes, but well worth it! Next time I may try to marinate the chops before hand to keep them moister. Really yummy!

Simple But Awesome Lemon Pepper Pork Chops

This was really tasty, and the pork chops turned out soooo moist and tender! If you have someone in your house who doesn't really like lemon, I think it would be tasty with other spices or garlic as well. Next time, I think we'll try them out on the grill!

Cottage Cheese Chicken Enchiladas

Seriously, these were SO good, there were NO leftovers! Amazing recipe!!! I used a fresh green chili pepper instead of canned (two would work better), and I'd recommend more shredded cheese, a 3rd chicken breast and a slightly bigger can of enchilada sauce to make sure that they are all covered up. I think this one will be a family favorite for a long time!
