Boilermaker Tailgate Chili

Reviewed: Nov. 22, 2011
Best chili ever!! I didn't have Italian sausage but I had some leftover taco meat and chorizo so into the pool they went. I tripled the recipe and it was gone in 2 days. This is my go to chili recipe from now on. Thanks Purdue!

Poblano Chile Enchiladas a la Gringa

Reviewed: Nov. 19, 2006
These were awesome. I cooked up extra peppers and added thin strips with the chicken before I rolled them up. In addition to the mozzy I used Jack and cheddar. Served with rice and refried beans and we agreed we couldn't have gotten a better meal at a restaurant!

Pasta e Olio

Awesome! I skipped the cayenne. Instead I seasoned some shrimp with cajun seasoning and quick fried them and added them to the pasta. A great dinner. Thanks

Chicken Enchiladas II

Reviewed: Aug. 12, 2007
Fantastic! My changes: sauteed 1 chopped poblano pepper and chopped cilantro with the onion. Since I doubled the recipe I substituted 1 cup of muenster cheese for the cheddar. I also used corn tortillas crisped in oil. Thanks for an awesome recipe.

What an awesome marinade. We grilled the breasts and enjoyed a caesar salad and twice baked potato as sides. Thanks for sharing!

We loved this wonderful side dish. The only thing I did different was substituted almonds for the cashews. I will be making it often.

Cool Whip® Banana Split Pie

Reviewed: Jun. 14, 2008
Hubby is diabetic so I made several changes for him. I lined the crust with thin sliced banana, then I put on chocolate sugar free pudding, more banana and then the berries and topped with sugar free cool whip, sugar free caramel and chocolate topping and then chopped almonds. We really enjoyed this and will make it often.

Twice Baked Potatoes

Reviewed: Nov. 6, 2006
These were fantastic!! I had no cheddar so I used 4 oz american slices and 4 oz of chipotle cheddar cheese. Because of that I eliminated the crushed red peppers. The potatoes had a nice kick to them thanks to the chipotle. I made a big batch and then froze six. Thanks for a keeper.
