Hugh's Dry Rub

This rub is outstanding Hugh! I use it on a pork butt to make Carnitas and Tamales. I've never had anything as good. Thank you from the bottom of my STOMACH!!

Spicy Pork Stir-Fry

I loved this recipe. I made it low fat by eliminating all but 1 1/2 tsp of sesame oil, using 3 jalapeno peppers, whole button mushrooms and hot sauce. I'm making another batch today to freeze in small one portion containers. Thanks so much for this wonderful recipe!!

Shredded Potato Quiche

Grandma's Peach French Toast

Twice Baked Potatoes

These were fantastic!! I had no cheddar so I used 4 oz american slices and 4 oz of chipotle cheddar cheese. Because of that I eliminated the crushed red peppers. The potatoes had a nice kick to them thanks to the chipotle. I made a big batch and then froze six. Thanks for a keeper.

Poblano Chile Enchiladas a la Gringa

These were awesome. I cooked up extra peppers and added thin strips with the chicken before I rolled them up. In addition to the mozzy I used Jack and cheddar. Served with rice and refried beans and we agreed we couldn't have gotten a better meal at a restaurant!

Not fun working with wet runny dough. Also what are you supposed to cover it with for the rising period? I tried plastic wrap sprayed with Bakers Joy and it did not work. The finished product was flat and tasteless. I'll be making a trip to Panara Bread tomorrow.

Really awful. It is no fun messing with runny dough. And what are you supposed to use to cover it? I used plastic wrap sprayed with Bakers Joy and that did not work. A waste of ingredients. I'll be making a trip to Panera Bread.

Roast Beef with Coffee

Hubby will eat anything but he didn't like this dish at all. I added spices and was able to overcome the coffee taste and we used the meat for burritos.
